Hop Dam has been a long time in the works, and its design required us to build a large stainless steel hop dam for our kettle, just for this beer! It was worth all the effort, because this beer is extremely hoppy and very satisfying, using 50% more hops than our Mean Manalishi Double IPA, which was voted Best Double IPA In The World by the US Beer Tasting Championships. Hop Dam is 10% alcohol by volume, and really hoppy, with a bitterness level that is very high but refined and therefore refreshing – its like kissing a hop!! Along with all the standard hop additions, it is also mash-hopped, first-kettle-hopped, and dry-hopped!!! Hop Dam is a 100% American-style IPA, dominated by the top-rated, assertive and refined Amarillo hops, along with lots of aroma and flavor from Columbus, and Cascade, and the wonderful Summit hops – the very special dwarf hop plant picked by hand, and sought-after for its great flavor and aroma. These hops work great together, and make Hop Dam TRIPLE IPA our new standard for hoppy beers!! It will be available for only a few months, so get Hop Dam while it lasts!

Bottle. Pour is dark gold/bronze with a small off-white head, little retention/lace. Aroma is pine/floral hops, hop cheese, big toffee/caramel. Taste is quite sweet, bordering on cloying; as it warms, pine/citrus hop bitterness appears, balancing out the sweetness. Palate is soft, oily, a bit syrupy, bitter finish. This bottle was reasonably fresh; in retrospect, this is probably best enjoyed on draft at the brewery.

22oz bottle. Darker orange pour. Thin layer of tiny bubbles. Aroma is alcoholic and heavy on hops. Heavy body, alcohol, hops, chewy. A bit heavy but not bad. 6/3/6/3/15

UPDATED: MAY 8, 2016 Draft at Eulogy. Very hazy dark orange pour with frothy soapy beige foam that left thick bubbly lace. Thick cherry caramel malts spiked with a huge hop bite. Not what I was expecting. Mandarins. Sugar Babies. Red currants. Mojhy apples. Bamboo. Orange passionfruit. Alcoholic Duck Sauce. Fruity thick sugar sweetness, mild tartness, and strong bitterness. A huge flavorful challenge. NICE!

Bottle at home (6 fl. oz., probably not fresh). Pours a dark amber with a white head. Aroma is heavy malty, heavy hoppy, pine, caramel, herbal, hint of citrus, probably lost most of its fruitiness already. Taste is sweet malty, hoppy bitter, fruity, dry hoppy ending with a long hoppy aftertaste. Very nice, massive hops and malts, and probably even better when fresh.

In short: bitter dry ale.
Pours murky amber with lots of sediment chunks. Little persistant off white head, some lacing. Pine, resins, caamel, earthy nose. Medium body, average carbonation, crispy texture. Taste is really bitter, some fruity, thick mouthfeel. Bitter aftertaste, A bit excesive and atriaght forward plain.

Bottle, 65cl. Murky orange/copper with heavy sediment and a frothy to minimal offwhite head. Floral hop and caramel aromas with hints of sour grapes and resin. Robust bodied with moderate carbonation. Thick and somewhat oily, with a heavy astringency. Heavy malt backbone matches the happiness well but still extremely bitter. No sweetness, with a monstrous bitter and alcohol palate. Soapy and very dry. A beast of an IPA.

22 oz bottle of the latest batch. Trade from a friend, thanks Daniel! Clear amber/golden copper with tiny bits of sediment floaters, nice two fingers of off-white head. Aromas of biscuit, grapefruit citrus, caramel. Tastes of grapefruit citrus, hop oils, lots of floral notes, some alcohol. Medium body with a dry and warm finish. Feels somewhat unbalanced, a bit too floral/bitter and boozy with not enough citrus for my liking.
