COMMERCIAL DESCRIPTION
A smooth, malty well-hopped ale, with a full aromatic nose made with 100% barley, hops, water and yeast. The "best bitter" description refers to this beer’s higher alcohol content and its depth of hop bitterness. It is named for Jim Baldwin & Ed Cooper, the first men to climb the Grand Wall of the Stawamus Chief (702 m) in July, 1961

Clear dark copper colour with biege head. Mild carmel malt and citric hop nose. Bitter citric hop taste with lingering bitter hop finish and malt overtones. Very well balanced.

1L swingtop. Lightly hazy orange-copper with a lasting disc of cream on top. Nose is orange-vanilla toffee and traces of dry leaf and wood. Front taste is orange caramel and a bit of chocolate toffee. Big finish of lightly tart apple with the bitter pith, tea leaf, resin and wood. Medium body is smooth with low-medium carbonation and balanced well by the dry finish.

Nearly a year old bottle, still tasting great. Pours brown with a pretty sizeable pillowy head and tons of lacing. Nose is sweet, some rum and raisins. Tastes are brown raisin bread, some breakfast tea, some earthy bitterness. Taste is medium/light sweet and medium/light bitterness. Medium body with lively carbonation. A realy beauty!

Bottled sample. Pours a clear copper color with a thin foamy tan head. Decent head retention. Aroma of toasted malts, caramel, raisin, mild floral hops. The taste is raisin, toasted malts, caramel, bitter hops. Medium bodied.

On tap at Darby’s. Pours a slightly hazy amber with little to no cap. A swirl takes care of that, and leaves a sticky lace. Aroma of caramel, nuts, a touch of wood smoke, slight biscuit. Taste is a huge punch of bitterness, with a subdued sweetness. Medium-high carbonation. Long dry finish.

Liter fliptop from Capitol Beer in Sacramento, CA. Pours dark translucent copper with a rather yellowish head. Aroma is malty in a mildly roasted way. Not getting a lot of understandable hop aroma. Med body at least. Roasty malt. Hop seems more fruity than anything else. But it’s not light fresh fruit. This is fairly bitter ale. Seems to fit the style. Nice drink.
