COMMERCIAL DESCRIPTION
A smooth, malty well-hopped ale, with a full aromatic nose made with 100% barley, hops, water and yeast. The "best bitter" description refers to this beerís higher alcohol content and its depth of hop bitterness. It is named for Jim Baldwin & Ed Cooper, the first men to climb the Grand Wall of the Stawamus Chief (702 m) in July, 1961

Pours hazy reddish copper with medium off-white head. Nose mixes sweet malt, bread and resin. Palate is a similar mix, with dark raisins countered by bitter hops. Itís sort of an experimental bitter, making nods toward the hop-damaged crowd as well the sweet-toothed. Nothing dominates, so the result is enjoyable without being definitive. A nice change of pace, but might not punch the ticket for traditional bitter fans.

Owl Farm, Brooklyn tap: Pours brown with a tan head. Aroma is caramel malt, raisin, dough, and some hops. Taste is lightly bitter. It reminded me of an IPA that sat too long. It was kind of sweet. Sort of thick. This isnít what I would want from an IPA, and it isnít entirely what I want from a bitter either.

An interesting take on a bitter. Dark reddish amber pour, opaque, with a thick, pillowy off-white head. Aromas of raisin and bready malt (a little like raisin bread, actually) and a touch of resinous hops. Flavour is quite malty, but some surprising hop presence here too, and a bit of that classic ESB bitter flavour. Darker, hoppier, and more complex and flavourful than most bitters, and quite enjoyable.

1L swingtop. Lightly hazy orange-copper with a lasting disc of cream on top. Nose is orange-vanilla toffee and traces of dry leaf and wood. Front taste is orange caramel and a bit of chocolate toffee. Big finish of lightly tart apple with the bitter pith, tea leaf, resin and wood. Medium body is smooth with low-medium carbonation and balanced well by the dry finish.

Nearly a year old bottle, still tasting great. Pours brown with a pretty sizeable pillowy head and tons of lacing. Nose is sweet, some rum and raisins. Tastes are brown raisin bread, some breakfast tea, some earthy bitterness. Taste is medium/light sweet and medium/light bitterness. Medium body with lively carbonation. A realy beauty!

Bottle. Copper beer with a dark cream head. Light malt and light woodsy aroma. Citrus and malt flavor. Medium bodied. Citrus and malt lingers with light caramel. Nice balance.
