Inspired by an ancient Mayan recipe, Ilkley Brewery has created an extraordinary Stout. It is velvety smooth, bittersweet, and has a subtle smoky fire in its belly. The Mayan is a Chipotle Chocolate Stout, dare you take it on?

50cl bottle at home from Beerritz. Body is nearly black, head is small, beige, creamy, average lasting, good lacing. Nose is tons of chocolate, flavor is cocoa, chili, dried fruits, toffee, mild coffee. Light sweet, medium to heavy roasty bitter. Finish is. Long lasting mild chili peppers. Full body, oily texture, soft carbonation. Fine dessert beer, well drinkable, chocolate and chilli combination is very interesting and delicious.

Almost a clash of the titans in your mouth. It’s like they took a sour ale with cherry flavors, mixed with an English bitter for that front of the mouth bitter, then added the imperial thick stout beer. They tried to hide the fact that they mixed all these beers in one pot by adding a touch of the pepper spice. Bottled

500ml bottle. Pours a lovely clear dark, dark brown tinged with burgundy and a tan head. Caramel, cocoa, light citrus, light vanilla, and a light chocolatey fudge note on the nose. Mmm...Taste wise, there’s a wee bit of a clash occurring. It’s almost like three separate entities are fight it out on your tongue. There’s a chocolatey stout element. A heavily hopped British ale, and the spice, and none of them really play well with the other. There are parts I enjoy. The chocolatey stout notes are great. Tootsie Rolls, light caramel but then the heat shows up, and it’s pretty decent but after that there is a heavy British style metallic hopping that clashes a little bit. Good idea, but it doesn’t quite work as a complete beer.

App.: Deep brown-black with a fair dark tan head. Aroma: Intense caramel/vanilla, there is some dark chocolate and a lighter pepper fruitiness, toasted marshmallows, a slight harsh metallic note?, a little more chocolate as it warms. Palate: Medium+ body, fairly loose carbonation. Flav.: Pretty intense and almost artificial chocolate with the same other sweet notes of caramel, vanilla, marshmallow, a little pepper fruitiness, faintly smoky; sweet with a strange bitter kick at the back of the throat and a light spice heat.

It was....OK.

Hand pump at Teresa’s next door. Great, creamy chocolate flavor up front. The pepper hit is a bit too much - it imparts an odd artificial sweetness. I prefer more subtlety with this style.

tepid chestnut, thinnest cream head. Soft pepper influence in nose, spicy but rounded by coffee bean roast, balance brought by faint sweetness. Harsher flavor, milky marshmallow sweetness front palate before light plastic and dead roast in the faintly spicy finish. Lots of balance throughout if harsh, thin and slick body needing some boost to match profile.

50cl bottle pours a watery but also inky black with some spitty, cream colored head. Nose has a lot of chocolate syrup, some star anise, molasses. Flavor has much more of the promised pepper, some chili heat, chocolate, black peppercorns, some cola. Loads of Hershey syrup. Peppery finish.

Barwa brunatna z brazowa piana, sredni lacing. Aromat gorzkiej czekolady, intensywny, przyjemny, jakby ktos na swiezo polamal kostki czekolady, super. W smaku ponownie gorzka czekolada z konktetna palonoscia, wyczuwalna goryczka plus mega ostrosc jakby chili, ktora niezle drazni gardlo i podniebienie. Piwo srednio tresciwe, slodkawe w posmaku z dodatkiem chili. Raczej dlugo sie bedzie pilo.

Dark black pour thin off white head and very light lacing ...... Aroma of bakers cocoa, hot peppers and some vanilla with caramel malts ..... Taste of vanilla, hot peppers, bakers cocoa, spicy peppery bite and caramel malts .... Has a dry off flavor .... Finish is dry and has a hot peppery burn on the backend that lingers .... Shame the taste isn’t as good as the aroma
