This limited bottling of Innis and Gunn has been matured over Canadian Black Cherrywood and then finished with the addition of maple syrup. To our knowledge, this is the first time that Cherrywood has been used to mature a beer. The result is a really full bodied Scottish ale, with a rich tasting finish.
Brewed using three malt varieties, roasted barley, wheat and Super Styrian and Goldings hops, Canadian Cherrywood Aged is matured for 49 days over lightly-toasted black cherrywood chips. Maple syrup is added post maturation when the beer is in cold conditioning to add a subtly sweet, toasty twist.
In another nod to its Canadian fanbase, Innis & Gunn has featured artwork by Canadian artist Tatiana O’Donnell on the carton. Her painting ‘Forest Spectrum’ won Innis & Gunn’s annual art competition: a collaboration with the Society of Canadian Artists.

Medium brown in color. Rich notes of toffee with a hint of cherrywood. I find it leaves a bit of a bourbon feel on the palate. One of the better seasonal's from Innis & Gunn.

The aroma of this beer reminded me of beer fueled sick. The taste is overly sweet. I i found the sweetness to quite sickly in combination with the woody taste, making it almost acrid. A bit biscuity flavour but lacks any defining malt characteristics, probably due to the cloying sweetness. One of Innis & Gunns poorer examples

Thanks to Viesturs,
Sweet, very sweet, malty emphasys. Notes of BA are almost absent in aroma, in flavor also minimal. Reminds more of doppelbock. Malt combination is boring, like there is no direction or some character- just light malty with some medium toasted malts color. Foam disappears fast. Above medium body.

Clear brown colour. Flavour has an intense sweetness from the maple syrup. Very light woody dryness. Overall a pleasant taste but too sweet.

Pours a clear copper colour with a thick head which dissipates quickly. Sweetish aromas of caramel and vanilla. The taste is sweet, with the maple syrup quite well-blended into the other sweet, caramel flavours. Some oakiness (from the cherrywood?) and hints of vanilla and berries. Rather too sweet to be easily drinkable, and rather under-carbonated. The artwork is nice, but the beer is not particularly memorable.

Bottle from Aldi, reddish dark brown with a fast-settling head, punchy sweet and alcoholic nose with notes of maple syrup. Initially rather too sweet, a woody, toasty and drier midbody then moderates the sweetness a little, but not enough. The finish is an intriguing but not entirely appealing mix of cloying and dry-bitter with a vanilla note. The painting on the box is excellent, though.

25.2.2015. Clear ruby. Aroma has caramel, oak, vanilla, berries. Not overly sweet oaky. Taste has berries, caramel malts, oak, slight alcohol. I quite like this.

Steady aroma - pours clear copper with inch white head which soon disappears to a thin line. No fizz. Very smooth and sweet - though too sweet for me.

330 ml clear bottle in cardboard box, from Vinmonopolet. BB July 2014. ABV is 8.3%. Cloudy reddish amber colour, pours fizzy with a small short-lived head, slightly off-white. Sweetish aroma with notes of caramel, raisins and dark dried fruits, notes of "oak" (cherrywood, of course). Sweet flavour, too sweet maybe, loads of caramel, maple syrup and dark dried fruits, also cherrywood, minimal hops. Okay, but probably not something I would buy again.
