COMMERCIAL DESCRIPTION
Harmonious aroma of citrus fruits and honey. It is strong, lively, vigorous and mellow at the end. Very good as apéritif.

Dishes : fishes with sauce, duck in orange sauce, ham in pineapple sauce, roast pork in peach sauce, chicken liver pâtés, duck and goose foie gras pâtés… Desserts : custards and pastries… Cheese : blue cheese, Munster, old cheddar… Recipe : « Melon à la Benoîte » : cut a melon in two parts, remove the center, fill it with some « Benoîte » Hydromel and leave it to macerate about 12 hours.

still, sweet, standard strength varietal mead. fruity nose of honey dew melon, some nutty and nutty notes, light phenol black pepper character, light to medium honey expression. lightly oxidized as well, with an earthy sherry nut / wood quality. rich texture, medium-full body, clean perfume ester expression. a well-made dessert mead.

UPDATED: DEC 26, 2011 Clear pale golden colour with no head. Sweetish sour honey smell Thick heavy body, oily flat. Sort of watery. Slight sour start with a long lasting sweet finish. Honey and a light harsh viniger taste. Its ok.

Clear brilliant gold. Amazing aroma of floral honey, some sort of flower like hibiscus, and vanilla. Very pleasantly sweet aroma. Flavor is rich and sweet and floral, like hibiscus or some other flower, but sweet with honey tones and vanilla with a good warm burn on the finish.

Clear pale yellow. Aroma is pretty intense honey, floral, herbal and citrusy notes, a hint of vanilla and alcohol. Flavor is very sweet with honey, floral notes, wax and herbal notes. Alcohol is well hidden. Liquorous. Pretty good mead overal.

Very, very pale straw colour. The aroma is very floral with a little bit of soft sweet white honey flavour. A touch of residual sweetness on the back with a fairly light sweetness. Very floral with almost a kiss of herbal flavour. It certainly doesn’t drink like a 14% mead at all. Nice.

Bottle shared at puzzl’s New Year’s Eve 2009: Light golden pour. The aroma is nice with notes of mild grapefruit, oak and soft honey. Slick body and a mild feel for the high ABV. Sweet but not cloying. Gentle honey with a soft cotton candy type sweetness. Sweet but cohesive and balanced with a soft citrus presence. Interesting.

Bottled, about 3 y/o at this point. Aroma is nice, lightly sweet, cleanly fermented, with some chili pepper, cucumber. Some cocoa, bread, sweetish and clean. Actually not too bad at all, considering my terrible luck with other stuff from them. Quite decent.

Clear golden yellow in colour with no head, alcohol legs. Aroma is sweet with honey and flowers, alcohol, herbal. Flavour is warming and very sweet, lots of flowers and honey, very rich. Hot mouthfeel, medium/body, mild carbonation. Finishes long,very warm and highly sweet.


This is now over 4 years old, still high in alcohol but smoothing out. Nice
