For those of you who donít know, this beer has a story behind it. Iím a bike nut and Iíve always wanted to name a beer after the Cannibal, partly because I think itís a cool name for a beer and partly because heís one of my heroes. The Cannibal by the way is Eddy Merckx, a Belgian who raced in the 60s and 70s and whom many consider the greatest cyclist in history. Heís kind of the the Pele or Babe Ruth of cycling. He was called the Cannibal because he was said to devour his opponents. Basically if you were in a race and Eddy Merckx showed up you were now racing for second place. So we made this strong Belgian beer in tribute to a strong Belgian rider. We also brewed it in celebration of the Tour De France and the bike club Iron Hill founded. This beer always goes on tap on the first day of the Tour and stays on tap through the Champs de Líelysee. We also save a keg that we break out every year at our thank you party for the organizers of the Iron Hill Twilight Criterium. So this beer is pretty steeped in cycling culture.

UPDATED: APR 21, 2007 After spending 6hrs at a DRY wedding I REALLY needed a beer. I raced to Iron Hill and promptly ordered a Cannibal.....wish I didnít. Dull yellow with fizzy head. Aroma was of yeast, various spices, and funk. The taste was dry and peppery with a metalic finish. No Thanks.

UPDATED: JUN 4, 2007 On draft. Pours copper with a decent white head. Aroma of fruit, belgian style yeast and spices, and citrus. The flavor is smooth, fruit, citrus, spices, and moderate carbonation.

Pours a golden brown with a white head. Aroma of yeast, citrus, hops, wheat, and bananas. Flavor of belgian yeast, light spices and some citrus notes. Very smooth and clean. A very nice belgian strong

Draft at North Wales Pours a clear golden brown with a deminishing white head. Has a decent carbination. The aroma was a touch on the bland side with hints of spiciness and some citrus. Has a smooth mouthfeel really seems to blend the higher alcohol content well.

750mL bottle, courtesy of argo0. Thanks, Aaron! Pours a hazy, medium yellow appearance; white head with decent lacing. Yeast and honey and apple juice in the aroma. Medium-to-full mouthfeel: plenty of yeast, buttery notes, and citrusy hops; hints of vanilla. Long, yeasty and vanilla / light butterscotch finish.

Draft at North Wales location. Pale golden body with decent head. Aroma is of banana, lite cloves and sweetness, yeast. Very sweet flavor that is a tad perfumey for me. Some spice but alot of yeast being in there. This one did not balance out well and felt almost like a waste of what IR charges for it.

(750ml bottle, 7.7% ABV on label) Pale straw body topped by medium off-white head that diminishes rapidly. Aroma is medium sweet, Belgian yeast funk, peach, some Saaz, vanilla. Taste is moderately sweet, nectarine/peach, bread. Somewhat dry finish. Creamy medium body.

Draught at North Wales. Very nice deep golden appearance with a faint dissipating head by the time it arrived at the table but still had excellent carbonation. Aromas of spice, light begian yeast, citrus and florals. Flavor was initially subdued but developed as the glass warmed to match the aroma. Nice fruit notes, alcohol well hidden. Not as complex or flavorful as you would expect for the style but accessible for those who find most too "belgiany"

On tap at the North Wales location. Pours a translucent golden with an average foamy white head that laced. Aroma of citrus, banana, bubblegum, bready, pils type malt and floral. Flavor of citrus, various spices, Belgian yeast, honey, light alcohol, some hops and on the dry side.

A very average Belgian golden ale, nothing really all that exciting about it, this especially hurts since this bottle cost me almost $20, hazy dark golden color, small white head with no lacing, fruity nose with notes of orange & yeast, medium in body, smooth & drinkable, semi-velvety feel, sweet flavors & finish, again nothing that stands out from any other average Belgian-style ale
