For those of you who don’t know, this beer has a story behind it. I’m a bike nut and I’ve always wanted to name a beer after the Cannibal, partly because I think it’s a cool name for a beer and partly because he’s one of my heroes. The Cannibal by the way is Eddy Merckx, a Belgian who raced in the 60s and 70s and whom many consider the greatest cyclist in history. He’s kind of the the Pele or Babe Ruth of cycling. He was called the Cannibal because he was said to devour his opponents. Basically if you were in a race and Eddy Merckx showed up you were now racing for second place. So we made this strong Belgian beer in tribute to a strong Belgian rider. We also brewed it in celebration of the Tour De France and the bike club Iron Hill founded. This beer always goes on tap on the first day of the Tour and stays on tap through the Champs de L’elysee. We also save a keg that we break out every year at our thank you party for the organizers of the Iron Hill Twilight Criterium. So this beer is pretty steeped in cycling culture.

Söt, jästartad och ganska fruktig arom. Lite bröd finns där också. Mjuk och trevlig. Ljust gul och med mycket och storbubbligt skum. Varaktigt med ok rester. Sockersöt smak som drar åt det fruktiga hållet men stannar för mycket i det sockeraktiga för att bli intressant. Däremot ligger fruktigheten kvar i eftersmaken när sötman dämpats. Mjuk och halvfyllig kropp med en låg kolsyra.

Ungstrup (29018) - Citizen of the universe, DENMARK - NOV 4, 2007
Bottled. An unclearyellow beer with a thin white head. The aroma is sweet with primary notes of barnyard, but also light notes of citrus - reminds me of a Saision. The flavor is sweet with strong notes of alcohol - too strong for my liking - and the flavors to go with the alcohol are too simle: barnyard, straw, and a touch of fruit. The alcohol leaves a slight burn on the palate. Thanks Papsoe for sharing.

#6 [Blind tasting @ Papsoe] Average fizzy white head that mostly diminished. Good display of lacework. Light cloudy orange / golden colour. Spicy citrus like feel at the initial sniff. Some fruity notes as well with feel of light banana and coriander. Over the palate some light caramel and sour fruity feel. Medium bodied with an average carbonation. Light to moderated sweet with light acidic. Somewhat acidic sweet fruity finish. 3 / 5 / 5 / 3 / 10 = 2.6

Hazy pale yellow colour with a white head. Light malty sweet aroma with wheat notes and hints of spices. Sweet fruity, but also yeasty citric flavor with notes of perfume.

Bottle. poured a hazy golden color with 2 fingers worth of head. Aroma is musty, and yeasty. Alcohol was present along with the taste of hops and yeast. Just an ok beer.

Cloudy blond color; creamy persistent cap. Quite ordinary Witbier flavor, with a rather spicy character, medium body and strong bitterness.

Decent beer. Not as good as the other Belgians they offer. I paid twenty bucks for the bomber and feel it’s a huge rip-off., thus the low rating. If it was half the price, I’d put it about a 3.6 or so.

Blind tasting at Papsoe. Hazy golden colour with a huge white head but fast disappearing. Aroma of yeast and wheat. Flavour of alcohol, wheat and yeast-like. Refreshing but nothing overwelming at all.

From bottle, blind tasting at Papsoes - beer no 6. Pours pale yellow with a diminished white head leaving a nice lacework. Slight grainy malt aroma. Flavour holds a slight note of alcohol to a mild malt flavour, dry. Ends with a slight warming alcohol feel to the dry malt flavour.
