COMMERCIAL DESCRIPTION
Many moons ago a monstrous hop-bomb of a beer ruled the taps here at Iron Hill W.C. In an attempt to contain this beast, we quarantined some of the most recent batch within the confines of a used wine barrel. Two months later a true oddball of an ale emerged. No longer the sharp-toothed leviathan it once was, S/T still remains the original bitter and citrusy hop edge of the zilla, but those notes are now intertwined with a lush oaky/vanilla presence and a slight funky/earthiness from the extended (3 month) aging in wood. 15.0 degrees plato 75 IBUs.

Bottled, 8% at KØ10. Mild mango aroma. Cloudy dark golden colour. Very small white head. The flavour is mild fruit, hint of sweet fruit, and clean, rough bitterness.

Ungstrup (29081) - Citizen of the universe, DENMARK - JUN 21, 2010
Bottled. An unclear golden beer with a thin white head. The aroma has notes of vinegar, malt, and fruits. The flavor is sweet with notes of malt and hops as well as lighter notes of brettanomyces and lemon, leading to a dry finish. Thanks FrumptyDumpty for sharing.

Handbottled (kindly shared by FrumptyDumpty at CPH BeerFest2010). Goldeny amber colour with mediumsized off-white head that leaves some lace. Aroma is caramel malts, some syrup, quite fruity, some mild earthy and spicy notes as well. Flavour is sweet malts, some alcohol, mild earthy and wooden notes as well. Quite nice Belgian style brew by a US brewer.

Bottled. Thx. Ryan for this. Amber coloured. Unclear. Dense beige head. ARoma of fruits, herbs, flowers, wood, sweetness and psice. LIgth grapy notes as well. Flavour is citric, full of wood and vanilla. Has some caramel, ripe fruits, flowers and also a somewhat earthy touch. Medium to full bodied. Sweet and fruity end with a medium bitterness.

Cloudy yellow with a medium off white head. The aroma is fuity, light acidic, vinous, brett and hoppy. The flavour is hops, brett, pine and light spicy. Dry dry dry. Lovely.

[ Courtesy of FrumptyDumpty ]. Unclear medium amber orange color with a average, frothy, good lacing, mostly lasting, off-white to light beige head. Aroma is moderate malty, caramel, barnyard, leather, brett, light moderate hoppy, citrus. Flavor is moderate to light heavy sweet and moderate bitter with a average to long duration. Body is medium, texture is oily, carbonation is soft. [20100506]

Bottle at Københavns Ølfestival 2010, thanks Ryan. Hazy golden coloured with a small white head. Fruity aroma of brett, hops, grape fruits and grass. Fruity flavour of brett, grass and hops with notes of citrus. Dry bretty and hoppy finish.
