Bottled 26/06/12. Graciously given to me by Rick! Hazy light golden with a tiny white head fading to a ring. Super gnarly aroma, barnyard funk, sweat socks, grandmas toes and acidic pear. Very sharp. Flavor up front is herbs, fading into pears, apples, lots of funk then ending with lemongrass and winter mint. Deliciously complex and unlike any cider I’ve ever tasted.

Has an aroma of a freshly cut wheat field on a fall day. A dry cider that is too deliciously unique to describe fully. Yum.

>> Pours sparkling, cloudy neon green with no foam. Nose is similar to some of the best of the best Norman ciders with starfruit and smoke. Flashes of Brett and wild yeast blend. Really beautiful, about as fresh and complex as cider can be. Taste is extremely light bodied, low acid, starfruit, pineapple, lemonade. Super refreshing. Should be consumed by the liter like a real sidra. Palate is thin, but it is clean and brightly sour so can’t really complain. The best Norman ciders seems to have a one up on this one for palate, but almost identical in aroma and color. Loving it if not for the rarity and price here in the US. Never seen it for sale before in my life until now.

Tasted many times over the past couple of years, this is one of my favorite ciders. This bottle came from Midtown. Pours hazy dark yellow with no head. The nose is more sour apple than anything else, but there is a bit of tart lemon and it definitely has some funky yeast to it. The flavor is the same, very dry with some tannic structure, green apple, tart lemon, with a ton of funky barnyard and cheesy yeast. The body is light with a bit of carbonation and a long funky tart apple finish.

Bottle from River City Cellars on 05/07/2011. Hazy golden body with a small white head. Sweet apple, tart and vanilla aroma. Tart fruit, vanilla, and apple flavor with some oak hints. Medium light body with moderately low carbonation.

Bottle shared by Levi. Very unique lemony edges. Sour apple, lemony tartness. Very tart, not a traditional cider. Sour cider mix. Very cool.

Bottle at Murray’s Cheese Bar. Slightly hazy golden pour. Aroma is funky and slightly medicinal. A lot of tannic character and some nice bright tartness. Very dry and a bit Brett as well. Lovely sidra

Bottle sample. Hazy yellow color, pretty much flat. Aroma of mild barnyard, dusty fruit and apple skins. Taste is full bodied fruit with a slight edge of tartness. Not as funky as the Ribela we had just before this, but pretty tasty.

came across this by chance, visiting a spanish bistro. this is one of the most interesting ciders i’ve ever had. cloudy pale straw color, funky farmy aromas. sharp acidic quality, a little sulfur. tangy, tart, farmy. there’s a curious salty, meat-like note in the finish -- very subtle -- similar to salami! i love this! this is what i’d imagein a cider made by hanssens would taste like.

750 ml bottle from Bushwackers. A really cool presentation. One of my first (or first?) ventures into Basque cider. Pours a cloudy yellow color, almost green, almost no carbonation. Some particulates floating around. A sour apple funky barnyard nose. Really interesting flavor: tart apples, sawdust, some cheese, funkiness. Certainly quite dry, cider bone dry flavors. Is unique. I wonder what this is fermented with? The softness/no carb for the most part is actually OK with me.
