Picked this up based on an article on lambicandwildale.com that billed it as "a drink that lambic drinkers might enjoy". Poured at a height of 6", only a small pour into the glass at a time (recommended traditional method for Basque cider). First pour was bright gold, the last was pastel yellow, murky with a bit of sediment. A few juice-like bubbles, appear and rapidly fade. Aroma is heavy on sterile gauze and horsehair from the Brettanomyces, not the best. Orchard apples and wet hay. Taste is softly tart apple, with some spiciness in the back, very dry finish, no residual sweetness. Virtually still like unblended lambic. Fairly quenching, not especially complex, but worth a try.

Bottle dated 2008. Pours with a fleeting head and very mild carbonation. the cider is basically clear and is pale yellow, haziness appears as the bottle progresses and eventually the cider becomes basically still. The aroma is very similar to the funkiness of an old bottle of Orval featuring some farmyard funkiness and a good limestone basement character. There are some fleeting fruit notes most notably strawberry and tart apple rind. The flavor is dry and displays a fair amount of sourness bordering on puckering. There is some fruit rind both of citrus and apple along with a tart apple flavor all around. Strawberry shows up in the flavor as well and is very welcome here indeed.

Flat, cloudy, yellow, urine color The nose pierces the nose with sharp ascetic acid vinegar smell, the barnyard funk of bacteria fermentation and a bit of apple skin. The flavor itself is absent any apple quality. Rather, it is a tincture of apple cider vinegar water. Brett and some horseyness. Not my thing at all.

(Notes)Yard’s sampling mug. I think we decanted this as best we could by following the picture on the bottle. Cloudy gelatin, pissy color. Smell is pungent with browned, overripe fruit. Lemon, white wine, apricots, a wet, macerating pile of hay minus the barnyard animals. Juicy. Feel is watery with the weak carbonation & wild stuff eating everything, but manages to deliver a half sour apricot/apple blend. Dry & yeasty. Near rancid(but not quite) fruit sweetness. Lemony finish.

Bottle. Hazy gold pour with light carbonation. Champagney and apple aroma. Medium bodied, apple and honey with a tiny unpleasant buttery note. Dry finish.

Bottle. Pours a just hazy gold. Subtle apple and dry champagne notes. Light sweetness on the nose, soft and subtle with some vinous hints. Medium bodied, dry and tangy. Nice dryness with some earthy tones to it. Finishes slowly with a light warming alcohol note and dull apples.

Hazy pale gold with a small, white head that left light lacing on the glass. Aroma of vanilla, wild yeast, apple, and hay. Taste of vanilla, tart green apples, and a dry woody, finish.

Thanks to the guys at Wine 101 for the great deal on the case. I can’t imagine a better cider. Its funky, cheesy and very lambic like. Bone dry, cloudy, tart, almost no sweetness. A lambic lovers cider...perfect.

Bottle from Carrboro Bottle Shop. Pours hazy pale yellow with only the carbonation from an aggressive pour. Nose and taste of tart apples, blue cheese, and awesome funk--gym socks and barnyard and rubber. Some lemon and vinegar as well. Tart, funky, and awesome. Super dry palate. Puckeringly good.

750mL bottle 2008 pours hazy golden/straw in color no head some bubbles. Aroma is overpowering of sour green apples and honey. Taste is not as I expected from aroma, very tart and sour which plays on the palate, finishes much like a wine Pinot maybe while also being very earthy woody. Extremely dry and drinkable really enjoyed this cider.
