Commercial Description:
The name CascaZilla is a play on both the name of our local Cascadilla Gorge and the monster amounts of Cascade hops in this beer. This red ale gets its distinctive color from a healthy portion of caramel malt, which also lends some body and sweetness to the beer. The predominant flavor and aromoa of this beer, however, is brought to you by the fresh American hops. If you haven't done so yet, treat yourself to Ithaca Beer's new monstrously hoppy Red Ale.

Bottle; nice amber color with a minimal off white head. Aroma of caramel, toffee, vegetables and grapefruit. Found this one too be too unrefined and did not blend too well. Flavor dominated by a semi sweet caramel flavor; hops were not very pronounced for me. Found an almost vegetable taste running throughout. Just ok for me.

Bottle from capone’s. Reddish-amber color with a medium head. Aroma is dominated by some nice grapefruit-citrusy hops and strong caramel malts. Flavor is hoppy, but has too much caramel malt to be really good. Decent feel. Tone down the malt a tad, and this would be even better.

Rated while drinking: Pours a dark ruby red with brown highlights along with a small off-white head. Hop dominated aroma with herbal notes. Pretty strong aroma, but definitely modeled after a west coast IPA. Overriding cascade flavor with a hint of alcohol near the end. Intense and quick to the point, but tapers off near the end. Medium bodied with lots of bitterness at the end. Instantly gives you hop breath. Drinkable because there are no astringencies to be found. Fresh bottle too! Cascazilla is definitely on par with Southern Tier’s IPA, and could definitely go up against some above average west coast ones.

Amber colored with thin white head. Aroma and flavor are weak hops and sweet malt. Minimally carbonated with a fairly dry and bitter finish. $3.5/12oz

Very tasty red ale. Filtered. Caramel amber color. Lots of flavors intertwining. Amber malt, intense cascade aroma and bitterness, and the warming of the alcohol make this a real enjoyable and memorable beer.

Bottle best before 9/07. Clear amber color, head doesn’t last.Light-to-medium body with moderate carbonation. This is listed here as an IPA but I’m not sure if that’s how the brewer sees it. It’s bascially a hoppy version of an amber ale. Sweet, caramel taste up front, with some grapefruit hops at the end. Not too bitter; dry finish.

Amber in color with medium sized head. Hoppy malty aroma and taste. Some caramel notes come into play in the finish. Decent beer.

pretty big sample at the brewery. Amber in color with a medium sized off white head. Aroma is alot of cascade hops, hops are somewhat earthy and resinous along with citrus, a nice amount of caramel sweetness also in the nose. Taste is nice, with alot of grapefruit, earthy hops and a nice solid malt backbone with a touch of caramel sweetness throughout. Moderate bitterness in the taste, that becomes a bit stronger and lingers after the finish. Well crafted.
