COMMERCIAL DESCRIPTION
A Belgo-American Ale brewed with special Canadian Honey Malt, generous additions of Simcoe, Amarillo, and Saaz hops, and an authentic Trappist Ale Yeast. Enjoy the tawny color, thick scent of tropical fruit and flowers, warming flavors of honey and clove, and clean, bitter finish.

bottle at Damicoís excelsior tasting, Pours cloudy ugly dark tan color, slight head, first sip is strange flavor of acetone and barley, finiish is flavors of dirty laundry. not good

Over 5 years old this is one of the earlier of the Excelsior! Series beer, one of my favorites in the country. Thank you Benz - you are the man! Definitely not a drain pour for its age, but the Trappist yeast has allowed flavor to prevail. The aroma is pretty much gone unfortunately bringing old wet cardboard hops, but some subtle sweet Trappist yeast notes. The IPA pours clear amber with a smaller white head. The flavor brings some sweet yeast notes, clear not dirty, with some old hop faded flavor.

Apr 07-750 bottle-Small Gathering @my place-shared by James-pours a rich thin light tan head and hazy amber color. Aroma is sweet medium malt-caramel, secondary spice hops, medium fruit-honey. Taste is sweet medium malt-caramel, secondary spice hops, medium fruit-honey. Smooth. Soft pineapple.

750 ml bottle thanks to jtclockwork, thanks for sharing this one James. Poured a deep honey brown with a flat small light beige head that quickly disipates. Aroma is rather sweet and almost reminiscent of a barleywine,notes of caramel, toffee, vanilla extract, syrupy overall with an additional touch of honey. Smooth body with soft carbonation an average thickness on the mouthfeel but it all just coms together nicely. Flavors of grassy older hops, honey,yeast, grains, slight slight alcohol. This one aged awesome.

Bottle shared at Johnís tasting. I donít know what this beer tasted like fresh, but it has aged amazingly well for a "hoppy tripel" or "double IPA" or whatever style it is. Pours amber brown with white head. Nose of citrus, toffee, caramel malt, honey and light brown sugar. Taste is toffee, caramel malt, honey and spicy hops. Taste starts with the honey and morphs into the other flavors. Still a decent hop presence for a three plus year old brew. Reminds me of a lightish barley wine.

750 ml bottle; thanks to Sammy for the trade; clear copper with sharp citrus and bananas on the nose; light bodied with a little buttery malt and stale hops; very smooth as it warms up and I can imagine how good this must have been when fresh; even now it has some fruity hops and syrupy sweetness

Aroma has some caramel malts and mellow spice with lots of hops and and is a bit earthy. Flavor is bitter, odd, rotten grain and leaves. Should have rated long ago but donít recall my thoughts. Now this is a mess.

Bottle. Pours a hazy light brown without much of a head, just a few bubbles looking very much like theyíd be at home atop a soda instead of a beer. This is interesting. Itís got a good two years on it, but still retains a little bit of citrus hop aroma, kept upright by a big malty backbone. Flavors are a bit like what one would expect from an older IPA or DIPA, much of the hops have fallen out, leaving the beer a little bit empty in the middle. Lots of old malt and caramel. Finishes sweet and almost a touch oxidized. Hopefully Ithaca will do this one again, because Iíd have loved to have had this when it was in itís prime, as Iíd guess my rating would be at least a half point higher, as you can tell that this used to be quite good, but has succumbed to the ravages of time a bit.

750ml bottle from phhd, thanks man. Bright, hazy orange pour, not much head though, the carbonation is a bit light. Slight hoppiness with that distinct belgian yeast aroma as well, kind of bready. Very smooth, the hops have faded it seems, but still good. Not bad for a two year old beer.

750, capped and foiled. April 2007. Thanks, RuzyGreenberg! Murky dark amber with a loose, thin tan film. Huge lemon and grapefruit nose, maybe a little bit of yeasty apple there underneath that. Absolutely unbelievable preservation of the hop character of this beer after 2 years or so in the bottle. Creamy medium body with low carb. Rich fruity flavors with a little light balsa wood under that and a fairly mild finish. A beautiful, understated DIPA.
