Imperial Stout brewed with Black Walnuts and Dark Belgian Candi Sugar and aged in a bourbon barrel. First released as beer #5 in the 2012 STAFF membership program.

Staff Bottle. Poured a black color with an average frothy brown head that lasted with good lacing. Moderate to heavy roasted nuts, candy sugar and bourbon alcohol aroma. Full body with a smooth texture and flat carbonation. Heavy bourbon sweet roasted black malt flavor with a heavy sweet and small bourbon alcohol bite finish of long duration. This is a standout beer.

Draught @ CBC 2015. Pours pitch black with a very dark brown head, lacings. Aroma of roasted malt, caramel, coffee, nuts, licorice, bourbon, wood. Flavor is light sweet, roasted, malty, caramel, nuts, vanilla, dark chocolate, licorice, light alcohol, wood. Medium to full body, soft carbonation, light sweet finish with some warming alcohol. Smooth and nice. 020515

CBC. Black with a brown head. Aroma is sweet, roasted malt, caramel, chocolate and bourbon. Flavor is very sweet and rather bitter. Sweet and rather bitter finish with warming alcohol. Oily. 020515

12 oz bottle: Lasting dark tan head, on top of an opaquely black body. Aromas of Chocolate, roasty, and deeply caramel malts dominate. Bourbon-y notes of vanilla and a touch of woody oak. There is just a touch of soy sauce to compliment the complexity. Some brown sugar notes come into play as it warms. Dark fruity esters are always a welcome visitor to imperial stouts, and they are generous. The flavor starts sweetly malty, but lends to a dry, well balanced finish. Roasty and a bit of dark grain acidity, as we as some alcohol dryness, help to balance malts as well. Flavors are much the same as the aroma. Full bodied, warming alcohol, and subdued carbonation enhance the beer's overall character. Fantastic beer!

Draft pour at the source. Pours a dark, opaque black with a beige head of foam. The aroma has spice, booze, chocolate, nuts, caramel, toffee. Taste is boozy and sweet. Awesome caram and toffee sweetness. Thick mouthfeel and body. Low to medium carbonation. Delicious stuff, for sure.

Draught at CBC 2015, green session, with Ken, Colin and Reuben. Opaque black beer with a nice beige head. Roasted chocolate aroma, figs, licorice, caramel, raisins, vanilla, bourbon, cocoa powder, some tar. Roasted chocolate flavor, caramel, licorice, woody, vanilla, warming alcohol, bourbon notes, hazelnuts, figs, some toffee. Very complex and good impy.

Sample from 2012 bottle #324/348 at the Jackie Os / food paring on 02/16/2013: Pours brownish-black with a minimal off-white head that disappears to a sparse outer ring quickly. Short strings of lacing on the glass. Aroma of roast malt, bourbon and nuts. Full-bodied with flavors of bourbon, chocolate malt and roasted nuts. The finish is mildly boozy with a malty and nutty aftertaste. Good beer all around.

22 oz bottle shared by Tmoney99. Pours black in color with a medium sizedfine beige head. The aroma has roasted malts, chocolate, some black walnut nutty character, wood, bourbon and vanilla. The flavor has much of the same and shows a nice integration of flavors. Some tannin character from the wood shows. Reports of infection were not noticed. In fact, this was very good.
