COMMERCIAL DESCRIPTION
This beer was originally brewed with the intention to clean up my malt room. I had a challenge to create an interesting beer with many different types of malt that would make sense to our patrons. As I began to develop the recipe with fall in mind, I remembered the many fall hikes that I took as a child. Many of the aromas and flavors of the wilderness began to come to life. Nuts, evergreen sap, honey, maple, stone fruit and smoke all found a place in this ale. A warming ale released in late fall.

Malt: American 2-row, Munich, Vienna, White Wheat, Biscuit, Cara 8, Special B, Simpsons Peated malt

Hops: Northern Brewer, Hallertau

Character Builders: Wild Flower Honey, Sticky Peteís Maple Syrup

Draft in brew side pours a very deep red with a creamy looking tan head. Aroma is very clean with a lot of malt and a little bit of smoke. Flavor has more smoke and a very full malt flavor like aroma would suggest there is some maple on the back end and the mouthfeel is very creamy I feel like I got the nitro version but there isnít that carbonation bite. Overall itís a pretty interesting beer definitely a must try as a card beer lover.

UPDATED: NOV 17, 2012 Thanks Helmut! Sampled from a growler this beer poured a dark brown color with orange highlights and a small soapy tan head that left a bit of lacing. The aroma was dryish and woody with a touch of caramel. The flavor was dryish, smoky, sooty and had undertones of honey and caramel. Long caramel and smoke finish. Medium body. Not my style.

Draft @ Jackie Oís during 5th Anny (from notes). Pours a slightly hazy amber color with a small off white head. The aroma was a bit subdued, but included some sweet malts, honey, maple, and hints of smoke. The flavor showcased a bit more smoke, caramel, maple, light fruits all leading to a dry finish. Decent, but not my favorite during this weekend.

Draft pint during happy hour at Jackie-Os (just $2!). Listed on the whiteboard as 6%. Super hazy amber-red color, fluffy, light tan persisting head. Lots of lace. Great, crisp, carbonation, refreshing to drink, decent-length aftertaste. The smoky, heavier maple, honey spice aroma is probably the best Iíve ever had in a red ale variant. Iím usually underwhelmed by the style. I usually find them too sweet and spice-heavy, but this has a substantial backbone. I guess it took a hybrid style to warm me up to it. The sweet taste is subdued, it just pokes through the spice and light umami of the smokiness. Itís a fantastic flavor, but at worst it might be leaving me wanting more... I think an imperial, more full-flavor version of this could be pretty awesome. They donít seem to have Hop Ryot on tap anymore, so this is definitely my new go-to happy-hour house-ale.

On tap at the brewpub on December 30, 2010. Pours a nice rusty red color with quite a bit of red coming through. The head is tan and has pretty good retention before falling and leaving a bit of lacing behind. The nose is quite nice and I love how the smoke character fits in. Really fantastic use of smoke along with some candied fruits in the background. Smoke isnít overpowering in the nose or taste, but you know itís there. A really nice touch thatís pleasant in the feel and the finish as well. One of the top smoked beers Iíve had. This was really interesting and unique for the style. Sampled from the tap at the brewery during the 5th anniversary party. Poured a clear amber brown with a near white head that dissipated to the edges. Aroma had sweet grain, honey and a hint of backing maple. Flavor had some sweet smokey grains with maple and a bit of honey coming out in the finish.

Sample at the brewpub. The beer is a clear amber-orange color with a medium thin beige head that dissipates slowly. Thin rings of lacing on the glass. The aroma is smoky and malty with a touch of hops. Medium body with flavors of smoked malt, molasses and mild peppers. The finish is smoky with a burnt malt aftertaste. Slightly above average overall.

Sampled at Jackie Oís Experimental Beer Fest on 11/6/10. Clear copper pour with a thin beige head. Dank nose of English malt with some earthy hops, honey and peat. Smoky and hammy flavor up front with some sweet malt and a crisp finish.
