Aberrance is our black saison. We aged it in a Cabernet barrel for 6 months with a special blend of our house wild yeast/bacteria cultures and some critters from our good friend Chad at Crooked Stave. The Cabernet barrel added some great complexity and richness to the beer with some hints of funk, fruit, and a nice subtle tartness. At 8%, Aberrrance as a nice full and elegant character.

Bottle... Pours dark brown with a small, fleeting, khaki head. The aroma is a complex swirl of roastiness, chocolate, dark cherries with a light splash of cabernet sauvignon and hints of sarsaparilla and damp wood. Full-bodied with tickling carbonation. The flavor is a unique fusion of tart, chocolaty and dark berry components. Tangy, crisp, fairly dry finish. Really nice. Bottle provided by darkguardian!

From notes 9/28/13. Bottle thanks to Jstax. Pours a deep van dyke brown color with eggshell foam. Leather, vinous fruit, bitter cocoa, rustic grain, tart plum, wet oak, musty basement, soil.

Sample at the brewpub. This brew pours black with a thin beige head that dissipates steadily to a film. Strings of lacing on the glass. Aroma of oak, funky yeast and fruit. Medium-bodied with a vinous oaky character and flavors of dark fruits and earthy yeast. The finish is mildly funky with a red wine aftertaste. Enjoyable beer all around.

Thanks to puddintane! Pours black a little bit of foam, red wine funk smell, tannic taste upfront followed by wine and nice funk taste.

Bottles thanks to trades with JStax and DrSilverworm. Shared at Jeff’s. Pours opaque black with a small foamy head that fades to a ring. Aroma is like funky red wine. Red grape skins, some light sour red fruit, toasted oak and a light barnyard funk. Taste is very woody with just a light sourness. Moderate musty funk in the finish to mix with the red wine. Minor spices there too. Dry finish. Solid beer but too much of the cabernet wine comes through for me to fully enjoy.

UPDATED: FEB 3, 2014 Bottle: thanks, Jason! Deep, mahogany colored body - kind of surprising for a "saison", topped with a foamy, beige head that turns quickly into a swampy layer of skin. Aroma has some vinous grape skins, dry & lightly tannic oak undertones of white wine, black cherry, & a touch of damp, musty funk that almost goes unnoticed. Taste actually has much more of the funk vibe with a big, mustiness covering the large oak underbody. Sharp, slightly astringent cherry skins, vinous grapes, very wine-like in execution with a light sourness that crescendos into the finish. Hints of plum & citric sourness leading the aftertaste. Nice brew, pretty enjoyable stuff.

Dark beer with a foamy brown head. Acidic, spicy, fruity nose. Tart beer with lots of acid, some oak, berries, spice and some red wine. I’m not of fan of sour beers, and this is one of those.

22 oz. bottle shared by Tmoney99. Pours a dark cola brown color with a medium sized khaki colored head. The aroma and flavor have nice tart fruit character, cab barrel, oak, tannins, grapes, funk, grass, some roasted notes, quite a bit going on, but it all comes together nicely. I wish I made the release so I could have another shot at this one.

Dark brown pour with a tan head. The aroma and flavor have some great raspberry and cherry notes with some toffee and brown sugar. There is a nice balance between the tart dark fruit and sweet brown sugar notes that really goes well. Medium mouthfeel and medium carbonation. Very nice beer. Glad I got to try it.
