We took our Razz wheat and soured it with B. Lambicus, Pediocaccus, and Lactobacilious it was then blended with our Organic Honey Nut Brown. Then blend was keg conditioned for 6 months allowing the wild yeast and bacteria to gorge themselves on the sugar rich nut brown portion of the blend. This beer is ripe with complexities including a fruity, musty, beady, and leathery nose and a light caramel covered raspberry flavor that finishes very tart and semi dry.

Taste sour, wood, sour fruits. Very very fruity, raspberries, red currant, sour red fruits. I must admit, this is very well done.

Bottle: Thanks, Corbet. Muddy, ruby-tinted brown body, mostly opaque & topped with a dingy, gray-beige collar that never fully reaches "head" status. Aroma of sour, sour raspberries. Very tart on the nostrils with a touch of underlying sweet pure for balance. A bit of wet leather & a hint of toasted malt showing the brown ale beneath. Nice tartness on the palate; tart raspberry flesh, sour lemon, mild lactic acid, & soured lactobacillus yeast. Finishes with some deeper notes of leather, nuts, & raspberry perfume, perhaps with just a light touch of acetic lemon skin. Nearly puckering, dry aftertaste. Very nice wild ale.

Bottle. Holy bawls sour. Nose is tart. Pour is sour. Taste is sour. Ok, do obviously I think this is sour-forward but it still has some pleasant malt character and a light, refreshing fruit expression.
