COMMERCIAL DESCRIPTION
We took our Razz wheat and soured it with B. Lambicus, Pediocaccus, and Lactobacilious it was then blended with our Organic Honey Nut Brown. Then blend was keg conditioned for 6 months allowing the wild yeast and bacteria to gorge themselves on the sugar rich nut brown portion of the blend. This beer is ripe with complexities including a fruity, musty, beady, and leathery nose and a light caramel covered raspberry flavor that finishes very tart and semi dry.

Bottle pours copper tinted brown with a small creme head. Smell is hearty raspberries, seedy fruit, sour oak and some cherry. Taste is soft, malty raspberries with lots of tart and sour notes that come to a drying end. Drinks very easily and isn’t too acidic or harsh. Hoping it stays that way over time!

Aroma is ripe berries and lemony zing. Flavor is intensely tart and very reminiscent of balsamic vinegar. Fruits are on the back end but need to be a little more forward to balance out the acetic nature of this one.. Good but man its tart.

Staff bottle. Pours a reddish/purple/brown color with a small off white head. The aroma is raspberry forward with a strong tart character, lacto, woody with some mildly sweet caramel in the background. The flavor is much of the same; big tart raspberry, lacto, wood, caramel, all blending nicely together. Strongly tart, but very drinkable. I had this from one of the barrels a couple years ago and this has come along quite nicely.

Skyview Tasting, Feb. 23, 2013. A good sour fruit beer. Flavor has sour balsamic vinegar and raspberry. Green tea in the aroma with yeast, and a solid malt base, with sweet and sour flavors that go well together.

Bottle shared by Sean, thanks! Pours a hazy deep amber with a tan head that dissipates to the edges. Aroma has a good amount of sour fruit and strong acid with a hint of backing funk. Flavor has sour fruit but finish is more acidic with funk.

February 23, 2013 bottle at Skyviews. Muddy brown pour with limited head. Primarily sour raspberry aroma. Taste was the sour raspberry but also a bit of sweetness.

Bottle - thanks Doug! Murky dirty orange pour with a small head. Leather, tobacco, sour fruit - this is quite complex. Delicious! Bottle is stamped with "staff only" - Doug traded a copy of his book for this with the brewer!

Bottle @ Matt’s house, courtesy of a Midwest friend. Pours a clear reddish brown appearance with a thin, light brown head. Vinous, richly tart raspberry, tangy, light lacto, juicy fruity aroma. Big juicy raspberry, oaky, quite funky, super easy drinking, moderately sour flavor. Really a nice beer.

Pour out of 750 mL bottle, thanks Aaron! Dark reddish brown pour with thin white head, aroma brought notes of nice raspberry, dark berry, chocolate, nice sour fruits as well. Taste is a nice mix of sour fruits, dark fruit, raspberry, vanilla, lemon, hints of oak, finishing sweet, very sour. Nicely done.
