In February of 2008, Jackie Os decided to start experimenting with wild yeast and bacteria. The first experiment was Grand Wazoo. Three glass carboys were filled with our Imperial Raspberry Vanilla Porter "Black Betty" and allowed to rest for six months on various sour cultures. Over the years Grand Wazoo has evolved and is now aged in bourbon barrels with more raspberries added during the aging period. Grand Wazoo was the catalyst for our sour project and what is now more than half of our barrel aging program. In three years, three carboys turned into 20 barrels and counting and those same sour cultures are still going. Cheers to the brew that got it started and is hands down the most extreme beer Jackie Os produces. Chill before serving, decant slowly to keep the raspberry sediment at bay, then allow to warm. Share with friends now or age in your cellar for future celebrations.

Brewers note: In 2011 Black Betty (imperial raspberry vanilla porter) was racked into a bourbon barrel with Brett B. The beer rested for 18 months, with raspberries added toward the end, producing batch 4 of Grand Wazoo

This 2011 batch was also bottled, with a count of 210.

22oz bottle.11 13 / 210. Poured a muddy dark brown color with a small sized off white head. Fruity, berries, raspberries, chocolate, and woody.

This poured a dark red/brown/almost purple with a pinkish head. Aroma was lots of sour tart raspberries, and light funk too. Flavor was lots of raspberry andf funk upfront, yeasty, and followed by an oaky, vanilla cheese finish,. very interesting stuff.

This poured a very murky dark red with a small pinkish head. Aroma was very tart raspberries, mild vanilla, and some roasted and oaky characters too. Flavor was very tart upfront, followed by sweeter raspberries and vanilla. Not much barrel notes at all in the taste.

Another Jackie Os beauty courtesy of markwise. Pours murky dark brown with off white head. The aroma is bold with balsamic vinegar, brown sugar, wood varnish, nut skins and lots of warm cherry skins (it appears Im on a skins kick). The taste is very nice indeed with brown sugar sweetened balsamic vinegar, black strap molasses, funky soured moldy citrus and chocolate. Man, thats an odd combination. This beer really pulls those notes together creating a challenging flavor and a harmonious one. Very cool brew.

22 ounce thanks to Veldrid. Pours with a thin head. Nice funky sour aroma. Taste is fruit - raspberries - and sour. With that wine like sour, Im also getting a touch of sweetness from the fruit. Very nice.

UPDATED: MAY 22, 2011 Pours a dark deep purple and minimal head. Smells of sour funk and sweet fruit like plums and grapes. Loads of chocolate and a small touch of coffee. Tastes of chocolate and plum puree. Tangy barnyard funk. Finish is strong and sour.

Big thanks to MikeLovesBeer for sharing this at his BBQ. Not sure what batch this was but Im assuming it was batch 4. Awesome sour nose with hints of fruit. Flavor was tart and just plain delicious. Loved this one.

Forgetfu with ANOTHER big hookup! Pours a nice dark brown color with reddish edges. Aroma of berries, the signature yeast of Jackie Os, light vinegar notes, some wet toothpick. Flavor is sour, berries, vinegar, yeast. Damn right this is awesome.

Deep brown. Sweet and sour aroma. Loads of bourbon, plums, vinegar, chalky raisiny notes. Flavor is a nice mix of bourbon, sour vinegar and bourbon. Crazy different and good.

Thanks to forgetfu. Bottle pours deep brown with an extremely thin head. Aroma is sweet and somewhat tart with notes of burnt caramel, bourbon, raspberry, maple/brown sugar, and a touch of earth. Flavor shows additional light roast, oak, and a touch of vanilla. Overall body is moderate, with a nice balance between bourbon/malt sweetness and tart berry acidity. Even though there were some monster beers present during the tasting, I still enjoyed this one quite a bit.

SF 5! Poured a murky brown from the end of the bottle. Aroma of chocolate and sour dark fruit. Flavor is a match, and is quite wonderful. Really good stuff.

Cannot believe that I got a chance to try this. Many thanks. Pours a red-brown with small off-white head. Nose is slight roast, raspberries, earth, cherry flesh, and bits of bacteria, with vinegar and chocolate as well. Very complex. Flavor is similar with chocolate, some tartness, and some wood (cherry pits?), and some dry chocolate. Very nice. Medium-bodied and lingering dry chocolate with berries.
