Bottle. Amber beer with a big cream colored head. Malt aroma with light spice and light citrus. Spice and yeast flavor with light citrus. Medium bodied. High carbonation. Yeast, malt, and spice linger.

Pure gold with a straw sheen. Dense crown of white foam adorns the glass and displays good retention. Phenolic and pungently hoppy aroma consists of lemon zest, dusty yeast, wood, plastic, hay, hopsack, and crackery malt. Hops are deeply herbal with a light note of resin, as well. Rambunctious carbonation expands as it meets the palate. Bone-dry with a vivacious plasticlike phenolic snap, upfront. Swift emergence of dry, crunchy, toasty Pils malt collides with the brisk phenols and augments the dryness as it gradually nestles more snugly into the palate. Malt steadily develops more weight-lending toasty richness along the way before yielding to a soft and flavorsome hop burst echoed by an equally assertive aspirin-tinged bitterness reminiscent of resin and citrus peel. Dazzling contrast between the luminous peach succulence, starker phenols and persistent malt crackle. Deceptively simple finish exhibits exemplary focus and well-balanced flavors of feisty phenols, floral and herbal (jasmine, aniseed) hops and crackery Pils malt. Citric bitterness lingers as phenols occasionally reappear in the tasty belches. Ahh…sit back, slowly savor and let this delicate beer come to you. A superlative effort. Should be fun watching this up-and-coming brewery evolve, and see what they have hiding up their sleeves.

Bottle. Head is initially large, frothy, white, mostly lasting. Body is hazy dark yellow, bottle conditioned. Aroma is lightly to moderately malty (toasted grain), moderately hoppy (herbs, flowers), lightly yeasty (cobwebs), with notes of pepper, lemon and orange zest, dried mango, honey, sassafras, gum. Flavor is moderately sweet, lightly to moderately acidic, lightly to moderately bitter. Finish is lightly sweet, lightly to moderately acidic, moderately bitter. Medium body, watery/velvety texture, lively carbonation. Wow, Shelton Brothers are bringing in some truly awesome new brewers to the States this year. I recently fell in love with the amazing Brasserie St. Germain thanks to them (those Page 24 brews are truly world class across the board). And now this...a superbly crafted, elegant, clean, nearly perfectly balanced saison. You really couldn’t ask for much better. Very few breweries in the world can make this style well, which is heartbreaking because I love saisons so much. But this one’s a new fave...a tip o’ the cap to Saison Dupont for sure, but not a copycat by any stretch. Very fruity, brightly hopped, and effortlessly classy.

clear gold with a large fizzy white head. very lively effervescent appearance. honey, pear, light fruity hops. grassy hops, pear, light fruits flavors. dry and light bodied with a lot of carbonation. a very nice refreshing saison or belgian pale.

Outstanding saison, thank you phyl21ca again. Pours light yellow with oodles of white soapy foam. Aroma is hoppy and peppery, with tiny other spices. Taste is pale ale hops,supported by understated spices, very smooth and light on tongue. Delightful summer ale.

the best belgian beer of the moment. Seems it’s brewed with american’s hops, that show that a good brewer is never closed to new experiments. The dryness and bitterness are amazings.

The bottle was leaking a deciliter in my baggage, so I have to open it without letting it rest a few days
It pours a cloudy deep blond color, with little head but nice lace. The aroma is light, cheesy and yeasty. It has a spicy flavor, the body is strong enough, but the yeast is probably too much, changing also the bitterness profile. Too bad for the accident; I expected more…

Bottle. Crisp gold if sediment left behind. Thick lasting creamy white head. Yeast adds a nice funky element to the aroma. Crisp sharp dry flavour. Peppery. Short finish.

UPDATED: APR 13, 2010 On tap at Moeder Lambic, Brussels. Pours semi clear light amber with a big head. Aroma is fresh citrusy hops. Very fresh aroma. Hints of mango and banana. Taste is quite bitter and a tiny bit metallic (not in a bad way). Quite malty also. Could drink this all day because it was so drinkable and so satisfying at the same time. Nice beer to drink on tap. Well balanced. Very well done and perfectly poured by the great staff (think it was Cedric) at Moeder Lambic ! Re-rate 100413. I had a bottle that was not very fresh in my opinion. It was very dusty with only small hints of yeast. No esters, no hops on the nose. This bottle would be a 3.3. I’ve had far better bottles in the past (that were about 3.7).
