Bottle: Poured a golden to copper blonde with a thin white head. The aroma is soft fruit and hops. The taste stabs at my tongue like a fork, opening it up to the hops and citrus fruit. I really think this is closer to an IPA. Very stunning bottle with a unexpected kick.

A well balanced hoppy blond beer, drinkable and refreshing. This beer, at the crossroads between the Belgian Saison style and the US West Coast IPA style, has a beautiful blond-gold colour and a nice creamy foam holding up well. It is refermented in the bottle and reaonably sparkling. It has a sharp bitterness with some slightly lingering after-bitter and a predominant citrussy/grapefruit aroma along with some other strong hop flavors and lighter malt flavors.

Bottled. Hazy yellowish golden colour, mediumsized white head. Some particles floating around. Flavour is earthy, fruity, mildly alcoholic and also some yeastyness. Flavour is very earthy, grassy, fruity and quite yeasty. Aftertaste is quite earthy, but has notes of very fresh fruits.

Cloudy yellow, thin head, quite persistent. Slightly perfumy aroma - pleasantly hoppy too. Taste is a great combination of dark resiny bittering hops and light grains, crisp and pleasantly fruity too - peach perhaps. Leaves a pleasant long bitter finish, and burps hops. Good quaffer for any time of year.

(Bottled, 0.75l) Golden Color, very hazy with yeast, with a small head. Crisply grassy-hoppy, honey-malty aroma with lots of fruit and hints of alcohol. Very fresh and crisply grassy-pils-hoppy flavor with a solid malty base, hints of diacetyl, and some acidic dryness in the finish. Refreshing palate with medium body and balanced carbonation. A very pleasant and crisp saison.

(750ml bottle, BB June 2009) Pours a lightly cloudy yellow body with a tall rocky white head and nice lacing. Aroma of mustiness, various florals, light citrus, and herbs. Flavor of crisp floral hops, white pepper, and light lemon. A very nice saison!

Hazy, pale straw-yellow beer, well-carbonated to a creamy, off-white head, leaving lace. A very welcoming nose of toasted, warm malts and ironoxyde. Some lemony and other citrussy notes, as well as the smells in the attic of an active farmbrewery. Perfect hoppy-malt balance, here the malt being more pale than toasted. Dry, no restsugars all the same, citrussy hops festival. Retronasal even more typical hopbitterness. Rather light mouthfeel, without a shade of emptiness, some gristslickness. Very true-to-style Saison; the initial ironoxyde nose made me jump for joy, expecting a new Saison de Voisin, Biset-Cuvelier or Extra Vieille d’antan (yesteryear), but in the end, it turns out more S. Dupont-like. Which is anything from regrettable, and for the first new beer for the new year, this a mindblower. GREAT - and from a brand-new brewery, at that. We want more!

UPDATED: SEP 16, 2008 This one is growing and growing and growing on me. The bottles have gotten much better, but I’ve especially enjoyed finding it on tap. Pours a bright yellow-gold with nice, white lacy head. Nose is fresh and citrus-hoppy, grainy with a lemony backdrop. Flavor is bright, lightly lemony with a fresh, grassy bitterness that refreshes and lasts. More hoppy than funky. Dry finish and lasting, mildly bitter aftertaste. Quickly becoming one of my local favorites.
