COMMERCIAL DESCRIPTION
A Cognac barrel aged version of Jean Chris Numero 2 which was brewed at Sainte Hélène by Christoph Gillard, the owner of Mi-Orge Mi-Houblon and Jean Francois Vaux of Jean Le Chocolatier. Limited to approx. 700 bottles of 37.5 ml each.

Sample @ Kerstbierfestival ’11 Essen. First sample from a 75cl unlabeled bottle, second was from a paper wrapped bottle which indicated bottle #202/300. Not sure if this is a second run of the original Cognac Cask. Brune foncée, col ocre. Arôme est léger avec une pointe boisée de fût, graisn et caramel, cognac donne une profile doux mais qui reste trop en retrait. En bouche, le cognac est léger et se noie un peu dans le profile plus malté de la bière. Malt grillé léger, laissant un côté grains; froment/avoine. Le tout conserve une pointe d’amertule houblonnée. Un peu décevante car j’aurias aimé voir le Cognac jouer un meilleur rôle.

Sample from 75 cl bottle at 17th Kerstbierfest in Essen. Almost black, tan head. Aroma of subtle cocoa powder. Taste is similar but boozy. Very light body.

Sampled at OBER Kerstbierfestival Essen 2011. Pitch black, opaque color, small beige to light brown head. Smell earth, roasty, dark chocolate. Very well balanced. Taste roasty, dark chocolate, lightly coffee and caramel. Again very well balanced! Suitable carbonation, medium to full body. Very nice beer!

Gelungen würziger Antrunk, der durch die Herbe frisch und das rauchig-trockene Malz würzig ist. Der blumige Hopfen passt wunderbar zu den dezenten Cognacnoten. Im weiteren Verlauf bleibt die Harmonie vorhanden, das Malz kann die Trockenheit etwas abschütteln und überzeugt nun mit schokoladigen Noten, auf die der Hopfen zusätzlich einwirkt. Das Bier in sich ist stimmig und absolut empfehelnswert! /12/12/12//13

Suggestion by the bartender at Delirium Cafe in Brussels on 12-09-10. Bottle 225 of 700. Pours deep black in color with a rich, sweet and dry finish. Solid barrel aged Belgian stout, but not too outstanding from American barrel aged stouts. Notes of chocolate, slight woody notes with definite cognac/boozy notes. Very well balanced, not too dry or boozy. Great limited release stout!

Bottle number 223/700 at Delirium. Pours a dark brown color with a huge beige/brown head. The aroma is sweet tart bitter chocolates, some woody cognac, roasted notes. The flavor is very nice; a rich cognac woodiness, some tart sour yeast, rich chocolates, bittersweet chocolates, roasted almost porter like malts. Odd and interesting.

Dense black body, deep tan head, fluffy bubbles. The nose was slightly less chocolate character when compared to the regular Jean Chris Numero 2 which I sampled side by side. Floral character to the beer as well. Taste is stronger up front than the base beer. Slight alcohol character provided by the cognac barrel but not overpowering or over present as there was only 2 months of aging in the barrel. Just enough time to provide some additional character to the beer but not so much that the wood takes over the taste of the beer. Well done. I am looking forward to trying this again in a few months when the beer has matured further.
