COMMERCIAL DESCRIPTION
Ambrée was inspired by the rustic farmhouse ales of French Flanders, particularly those brewed by Brasserie Thiriez in Esquelbecq — one of our favorite breweries in the world. Ambrée is a dry, tart, naturally conditioned amber ale fermented and matured with dozens of different strains of brewers’ yeast, native wild yeast, brettanomyces yeast, and souring bacteria. It’s 6.4% alcohol by volume, has a finishing gravity of 1.005, and is 3.5 pH.

Tap at hops and pie. Hazy orange copper with a thin off white head. Aromas of tart fruit, caramel, toasted malt, flowers and funk. Flavor is the same minus the flowers. Light cherry notes. Light to medium bodied, slightly dry finish. Lingering tart fruit and malt.

750, capped. Thanks, R (I think)!. Batch 3. Pours a cloudy medium amber with a loose white head. Tangy funk on the nose, some earthy caramel notes. Creamy medium body with lively carb. Tangy, earthy funk and caramel on the mid palate. Pleasant and drinkable but not spectacular.

Bottle@home after bottling monkthoughts. two finger beautifully beige foam. Mahogany slight haze. Yeasty Brett/ funky oak red currant notes. Plenty of qcomplex sour/ Brett flavours. Bottled 11/12/2013, drunk 2/5/16.
Lightly gushing, black cherry-to-magenta-amber body shows a light haziness despite my best efforts of mitigating the gushing. Huge head is light beige and well-retained.
Very fruity nose also shows a good deal of acetic character, with very light chocolate from the malts and tons of earth and horsey brett. Lots of pepper, but no alcohol or flaws.
Quite sour in the mouth, with the malts adding bread, dry chocolate, and light, dry toffee. Plentiful amounts of acetic and lactic acid with tons of fruitiness and a lot of hard mineral character from the water and yeasts. Bone dry, exposing light to moderate astringency.

Very silly to call this "Another failed attempt by the Americans at sours", as does tderoeck. Is this a Cantillon or a 3F? No. Is it trying to be? No. Yes, this has perhaps a bit too much acetic character coming off as lightly chemical in nature. Have I found this character in many, many lambics and other Belgian sour ales? Absolutely.
It’s a fine attempt at a sour ale and obviously brewed with a high degree of care and quality.

Bottle. Nose of dust, caramel, raisins, coffee, and a bit of bandaid and glue. Quite sour--more than expected--with green apples, minerals. A bit too medicinal and astringent. Weird, interesting stuff, but not quite right.

From tap at Copenhagen Beer Celebration 2014. Copper color with red notes and off white head. Malty and yeasty aroma, caramel, wood, spicy, funky, fruity - berries. Sweet and light acidic taste like aroma. Medium almost thin to oily body with soft carbonation.

UPDATED: OCT 27, 2015 Draught at the brewery, almost no head, cloudy orange color, aroma of sour fruit, vinegar, some maltiness and a hint of rubber, fruity flavor, lightish sourness, light but empathic bitterness. Nice and easy.

Keg at route CBC, london. amber colur with small beige head. Aroma is tangy with brett, citrus, vinegar, leather, earth. Taste is sour and dry with vinegar, red fruits, esters. Overall, nice and tart
