COMMERCIAL DESCRIPTION
Back in February of this year, we added several hundred pounds of raspberries to oak barrels containing mature sour beer. We then allowed the beer to re-ferment to dryness. The result is Atrial Rubicite, our first barrel aged sour beer to incorporate fruit. Atrial Rubicite is made from well water, barley, wheat, hops, farmhouse yeast, native yeast from the Texas Hill Country, souring bacteria, and raspberries. It’s 5.8% alcohol by volume, has a finishing gravity of 1.005 and is 3.36 pH. It is unfiltered, unpasteurized and 100% bottle conditioned. Atrial Rubicite is our first beer to be packaged exclusively in 500 ml bottles.

UPDATED: FEB 22, 2015 Rating 6100! 10/29/14. 500mL bottle with big thanks to djd07! Very deep red pour, almost purple, with a neat fizzy pink head that sadly sizzles away fast with no lacing. Otherwise pretty neato looking. I’ve been sipping this for awhile now and contemplating it as it starts to warm slightly, and discussing with Mrs. Owl. Overall, I dig it. Sour, raspberry, it delivers. Now, let’s dig deeper. Sourness hits my nose first, definitely sour, lactic, citric, raspberry, etc. Digging deeper, there’s a sort of weird meatiness, and surprisingly, given the low-ish ABV, a touch of alcohol popping through. Drinking and sipping for a bit now, the sourness and the raspberry pops and lingers. Pretty tasty, but perhaps a little one dimensionally sour. Reminds me a bit of a chalky Smartie. Tannic, bitter, seedy aspect, jammy. That meaty aspect is hitting me again. Lingers dry and tart with a borderline fecal funkiness. Interesting, tasty.

Bottle. Pours a gorgeous garnate color with nice creamy pink head that lasts. The nose is huge fleshy raspberry, seed, oak. Thick mouthfeel jammy raspberry, oak aged jam, wow just amazing.

Tranlucent red with small pink head. Aroma is tart cherries, medium body, medium carbonation, and little small-bubble lacing. Taste is nice rich tart raspberries. One of the best of the night.

500 ml. bottle split by 3 @ “Exclusive S&G Tasting: Special guest 77ships”. Thanks to Mathieu87 & PriorL. Very nice, long time want. Pours extremely dark pink, small dark pink head; Nose is thick raspberry yoghurt, lots of pits, huge fruit; Taste is thick raspberry pure with lots of pits, thick, nicely tart, light yoghurt sour, faint brett, funk, med. sour, lots of thick fruit,… Thick raspberry juice body. Very nice. More straightforward, almost traditional than other Jester King beers.

Batch 3 bottle pours clear ruby red with low head. Aroma is huge juicy raspberries and light tart. Taste is crisp and clean tart berries with a Dry finish. Could almost be a berry berliner

Damn! This is so complex I'm not sure where to start. The aroma is sour, woody, funky. The flavor is fruity, dry, and tart. Really good.

From tap at Copenhagen Beer Celebration 2014. Red color with nice pink head. Fruity funky aroma, raspberry and some cherry, some wood too. Taste is light sweet and funky fruity sour. Medium body, oily, average carbonation.

shared bottle by a friend. poured a nice slight cloudy red colour with a pink head. amazing aroma of raspberries, marmalade, tart, funk, oak, nice fruity. taste kicks in with full sweet fruit notes of raspberriesbut the sour notes are really complex. boy... i wasn’t expecting this! amazing!
