COMMERCIAL DESCRIPTION
Back in February of this year, we added several hundred pounds of raspberries to oak barrels containing mature sour beer. We then allowed the beer to re-ferment to dryness. The result is Atrial Rubicite, our first barrel aged sour beer to incorporate fruit. Atrial Rubicite is made from well water, barley, wheat, hops, farmhouse yeast, native yeast from the Texas Hill Country, souring bacteria, and raspberries. It’s 5.8% alcohol by volume, has a finishing gravity of 1.005 and is 3.36 pH. It is unfiltered, unpasteurized and 100% bottle conditioned. Atrial Rubicite is our first beer to be packaged exclusively in 500 ml bottles.

Aroma is raspberry jam smothering a freshly baked slice of bread. Deep ruby red raspberry blood. The taste is another beast all together. Salty tart and crisp. The fruit lingers in a soliloquy of aroma. Clean palate. Sour at its best! Damn! ---Rated via Beer Buddy for iPhone

Bottle shared by alexsdad06. Poured a hazy dark ruby color with an average fizzy off-white head that mostly lasted with good lacing. Moderate to heavy tart berry, wood and sour aroma. Medium to full body with a dry slick texture and flat carbonation. Heavy tart & sour flavor with a heavy berry tart finish of moderate to long duration. Interesting solid beer.

500 ml bottle shared with Tmoney99 thanks to Errl. Pours a slightly hazy deep reddish purple mahogany color with an initially large fluffy pinkish head that settled quickly. The aroma and flavor have big raspberry jam fruity character, tart, oak, tannins, some acidity, I am a big fan of this, this has the pop of a Blushing Monk with the abv of Rubaeus, if I could get this in cans I would drink a ton of this on the golf course.

Older bottle. Pours red with a darker tint, pink head that fades to an ample ring around the glass. Aromas of raspberries, raspberry juice, some light vinegar. Tastes moderately tart, some raspberry juice sweetness underneath and more prominent up front. The raspberries are wonderful; they balance the sour funk nicely. So far my favorite from Jester King. Excellent.

500 ml bottle thanks to T.J on this share! Bottled June 2015. The appearance is beautiful; dark red / ruby color with very thin white head. The aroma is a deep raspberry, raspberry yogurt and light traces of oak.

The taste is is layers of raspberry jam, tart, funky raspberry center with a mildly sharp oak toward the finish. The texture is interesting. It starts jammy and turns bone dry from the oak barrel. The barrel is starting to take over and the sourness is starting to win over the awesome raspberry jam character.

I got say this is a beautiful beer and since I am not a huge sour fan, this rides the line of having the barrel and funk take over. Perfect time to open the 2015 (before it becomes to sour). The layers of fresh berry mixed with sour/tart berries is something special.

Bottle. Aroma is just huge raspberry jam mixed with some light funk and cherry skin. Tastes like awesome raspberry purée, light red wine, apple skin and cherry skin. Just an awesome beer. Can’t believe I haven’t had this before.

Bottle from March 2013 - wish I could remember who gave it to me! Ruby pour with a rose head. A nice tart and sour nose, smooth and slightly dusty cherry pit, raspberry seed, some blackberry or elderberry jam. Mild+ carbonation and moderate body, very dry, tart finish, very yummy.

A burgundy red ale with a thin lacing off white head. In aroma, wonderful raspberry jam, light acidity, black berry, beautiful. In mouth, a nice tart raspberry jam with light acidity, light Brett, Epsom salts, light salty notes, wonderful beer. Bottle.

Une scintillante bière rouge voire pourpre assez opaque se verse dans le verre, et la mousse est quasi inexistante. Au nez, c’est une véritable purée de framboises avec quelques notes de chêne. L’acidité n’est pas trop agressive en bouche et véhicule très bien les saveurs authentiques de framboises. Très sèche et très désaltérante, c’est maintenant ma "bière aux fruits" favorite.
