COMMERCIAL DESCRIPTION
Funk and tartness abound in this dry, golden, “old” saison aged for months in oak barrels. Unfiltered, unpasteurized and naturally carbonated through re-fermentation in the bottle.

OG: 1.052 FG: 1.002 ABV: 6.5%
Water: Hill Country Well Water
Malts: Organic Pilsner, Organic Two Row, Organic Wheat, Organic Caramunich
Hops: Czech Saaz, East Kent Goldings and/or other varieties depending on availability
Yeast: Farmhouse Yeast, Wild Yeast from the Texas Hill County.
Bacteria: Lactobacillus and Pediococcus.

Bottle: Poured a cloudy orangey color ale with a medium size foamy head with OK retention and some light lacing. Aroma consists of sour and tart notes with light funky notes. Taste is also dominated by some sour and tart notes with some funky yeasty notes in the background with limited acidity level. Body is full with limited filtration and medium carbonation and no apparent alcohol. Not as complex as I was anticipating and saison base beer is hard to decipher through all this aging but very good rink nonetheless.

Bottle... Hazy peach pour with a small, creamy, white head. Good retention. The nose offers faint yeasty and woody notes. Medium to full-bodied with lively carbonation. Lightly tart, but not a lot of fruity flavor or complexity here. Finishes tangy and tongue-numbing. Vastly overrated. As disappointing as New Glarus Thumbprint Series Oud Bruin – which is also vastly overrated. Bottle courtesy of Rosebud butternuts!

750 ml bottle thanks to errl. Pours a clear yellow with a fizzy white head of foam. The aroma has nice citrus notes like lemon zest and oranges, but there’s also a musty, earthy quality coming through. The taste is not really sour, but it’s on the verge of it. Maybe just a touch tart, but more musty would be how I describe it. Medium body with medium to high carbonation. It was a nice way to break up the heavy beers we had opened so far.

Bottle, 75cl. Thanks Sølve. It pours a hazy unclear orange colored body and a small white head. The aroma is pretty lovely, wonderfully funky, with orange peel, pine cones and black pepper. Equally lovely flavor, a nice bitterness chiming in. Some yeast, lots of oranges and pine cones.Dry, effervescent and medium bodied. Lasting finish. Sure a refreshing and tasteful one, hope to see it again. 140329

Bottle pour cloudy yellow. Nose sour and tart some floral. Taste similar to nose tart frontand mild funk. Fairly smooth mouth. Vanilla and oak late.
