COMMERCIAL DESCRIPTION
Funk and tartness abound in this dry, golden, “old” saison aged for months in oak barrels. Unfiltered, unpasteurized and naturally carbonated through re-fermentation in the bottle.

OG: 1.052 FG: 1.002 ABV: 6.5%
Water: Hill Country Well Water
Malts: Organic Pilsner, Organic Two Row, Organic Wheat, Organic Caramunich
Hops: Czech Saaz, East Kent Goldings and/or other varieties depending on availability
Yeast: Farmhouse Yeast, Wild Yeast from the Texas Hill County.
Bacteria: Lactobacillus and Pediococcus.

75CL stored upright for 6 months. bottled early 2014. Great clarity. crystal clear golden pour. aroma was tart, wheat, hay, grassy with some kiwi and other tropical fruits. Taste was fantastic. great tart taste and almost champagne like in the mouthfeel. enjoyed this a lot!.

Bottle thanks to errl. Clear gold pour with a small head that fades to a thin ring. Aroma is really nice. Lemon, leather, figs, honey, musty hay, and vinegar. Tastes very dry and leathery. Pretty tart too. Lemon peel, leather, hay, vinegar, apple skins, and earth. Medium body. Pretty interesting. Kinda wish it wasn’t so dry but I still really liked it.

Bottle: Cloudy with golden edges & an orange, sunburned center. Foamy white cap piles up nicely, leaving decent lacing behind. Aroma of tart green apple, zesty lemon & citrus, mild farmhouse twinges with some wet hay, funky cork, & some damp mustiness. Flavor follows through with lemon zest, ripe apple sourness, oaky tannins, a touch of acetic apple cider-like vinegar, & a strong backlog of musky hay & some damp farmhouse flavor. An intentionally soured saison. A touch of funky cork in the finish as the acidity grows with time, sharp & tart ending. Thin-medium, snappy mouth feel. Really nice beer.

Deep golden/straw colored pour. Slight white head. No lacing. Aroma of malt and hops with a very nice sourness beneath it. Some bready notes as well. Taste is the same with some lemon notes.

Une saison bien florale avec bon mordant acétique qui voit ses céréales littéralement craquer sous la dent. Le vieillissement en barriques est pas trop musclé mais laisse quand même ses traces tanniques qui contribuent à la sécheresse.

I love the taste, lemon-lime with funk, nice mouth viscous mouth feel, dry finish with some tannins and wood. The nose is very lacto heavy to me, thus the slightly lower score there. Enjoy it. I’d drink a second.

Bottle: Poured a cloudy orangey color ale with a medium size foamy head with OK retention and some light lacing. Aroma consists of sour and tart notes with light funky notes. Taste is also dominated by some sour and tart notes with some funky yeasty notes in the background with limited acidity level. Body is full with limited filtration and medium carbonation and no apparent alcohol. Not as complex as I was anticipating and saison base beer is hard to decipher through all this aging but very good rink nonetheless.
