COMMERCIAL DESCRIPTION
Traditional, sour, low gravity saison aged in oak wine and whiskey barrels with naturally occurring wild yeast and bacteria from the Texas Hill Country.

On tap at the brewery. Aroma of lime zest, floral, and barnyard. Pours hazy blonde with great film and solid carbonation. Taste is wonderful. Light lemon/lime zest, pepper, barnyard, and a clean yeasty finish. Crisp, tart, and clean. Just a perfect session saison.

This one poured a lighter red color with an of white head. Aroma was of light funk, vinegar and caramel. Flavor was similar ,lightly toasted, some funk and mild tartness.

Blind sample from Mathieu87. APPEARANCE: light clouded blond beer, no foam. NOSE: oranges, lytchee, very fruity, quite hoppy. TASTE: fresh, citrus, dry aftertaste, fruity, some earth.

Pours a hazy/cloudy yellowish orange with white head. Very carbonated. Oak, brett, a bit of vanilla, funk, and citrus on the nose; follows onto the palate. Medium bodied. Finishes tart and dry.

Appearance - hazy yellow Aroma - yeast funk Mouth - medium bite. Taste - nice sour flavor. Just about perfect amount. Grapefruit mouth pucker but not over powering. Not funky aftertaste Overall - excellent. Just the perfect amount of bite.

Look: Pours with huge, creamy, medium sized bubbles, light off-white head. Fast, good retention with sticky lacing coming down. Creamy, very thin, thick layer stays on top, leaves lots of lacing. Very cloudy, dark yellow with light orange hue.

Smell: Light to medium lemon, apple sour. Subtle, but fine leather funk - makes it warm and fuzzy. Fresh cut grass, bit of hay, also some light tropical feel.

Taste: Starts with light lactic sour, goes to very light, bread (and light burned crust) middle, missing a bit of malt character here, but ends with a pleasant and satisfying finish - light noble hop bitterness with medium sour. Funk goes down a bit, but more pineapple and some medicinal notes.

Mouthfeel: Light body, crisp and dry - very fresh.

Overall: Light and fresh, complex enough, too bad its too expensive for a go-to beer on a hot summer day - that would be it’s perfect niche.

Pours a cloudy yellow, light & white head. Aroma of spiced lemon, sharp funk, yeast, bread. Taste is nice and tart, bready yeast, funk in the trunk, lemon zest. Finish is dry, light mouthfeel.

Tap at brewery. Yellowy gold, hazy. Bready nose, with light floral esters, some light citrus and wood in there too. Floral esters in the taste, peaches, bread, cereal, lightly tart yeastiness. Dry and well-carbed. Very refreshing.

Crisp and tasty but not a very complex saison. There’s a slight bitterness there in the finish and just a touch of tartness. Probably would be most welcome on a warm sunny day with some hard cheeses and salty cured meat.

750 ml bottle, shared with my wife. From a trade, thanks Santin! Pours a dark clear golden fluid with a three finger white head. Aroma is really enjoyable with some earthy notes, light yeast, grain and some light lemon. Taste is a bit light but very balanced and nice. Some notes from the barrel, some light bitterness and some funk from the brett rounds it out.
