Traditional, sour, low gravity saison aged in oak wine and whiskey barrels with naturally occurring wild yeast and bacteria from the Texas Hill Country.

My Bottom Line:
Wilderness, citrus zest and spicy hop greenness yield a tart, fruity and woody finish for a unpretentious and highly pleasant Wild Ale.

Further Personal Perceptions:
-A sheet of foam tops the cloudy beige.
-Acidic splash sticks to the palate.
-Initially highly effervescent, but dimming quickly.
-This is very rustic and fun, but it could be more polished.

750 ml bottle, Batch 15, February 25, 2014. Aroma is oak, light Brett and subtle citrus. Appearance is pale straw color.

Flavor starts off with a light sour Brett, juicy citrus in the center with the oak mild toward the finish. Very soft and mellow lactobacillus tartness that gives it a nice balance between tart and sour. Good level of carbonation with a medium body. This is really nice.

Bottle shared at the RBESG ’14, Grander Tasting @ Moncada, 09/08/14 thanks to Richy. Hazed orange amber with a moderate off white covering. Nose is tangy peach, citric zest, bitter fruit rinse, tangerine, tarte grapes, woody vibes, funky. Taste comprises tangy fruits, soured peach, dank oak, tarte apricot wash, mandarin, barnyard tones. Medium bodied, fine carbonation, semi drying close with a puckering curtain call. Nice sour!

RBESG pt 18. Moncada. Grand Tasting. Very hazy gold beer, small pale cream colour head. Palate is very dry and crisp. Light sourness and sherbet - seltzer. Touch of lemon acid and then some balancing candy sugar. Light crisp dry finish. Citric linger.Good.

Bottle shared at RBESG 2014 Grand Tasting. Opaque murky yellow color, small off-white head. Smell and taste sour, citrus, lemon, tart, yellow fruits, very well balanced. Very nice actually!

Bottle thanks to Richy at RBESG 2014 Grand Tasting. It pours cloudy orange with a small white head. The nose is fresh, funky, orange peel, sherbet, lemon peel, wood and sour candy. The taste is crisp, tart, sherbet, candied peel, light acidity, green apple, lemon, barnyard, brioche and orange muffin. Medium body and fine, prickly carbonation. Balanced and very drinkable. Great stuff.

Bottle shared at the Rate Beer European Summer Gathering on 09/08/14. From brief notes… Pours a light orange with a white head. Nice, sour lemon curd aroma. Light body, zingy. Lemon meringue - but tart! Nice.

Hazy golden with small head. Good lacing Aroma is tart, bretty, some wood, critrus, pine, lots of grapefruit and some barn. Taste is grapefruit, brett, nice acidic. Lots fo fruits, grapefruit. Sour and nice saison that is perfect top sip on a warm summer day. Just what i needed, Bottle is 1 year thou so the acidity is stronger. Soft carbonation, oily texture
