COMMERCIAL DESCRIPTION
El Cedro, an 8.0% ABV farmhouse ale dry-hopped with Citra hops, aged with Spanish Cedar spirals and bottle conditioned with Brettanomyces yeast. It combines tropical, fruity hop flavor and aroma with funky, barnyard yeast character and the unique flavor and aromatics of Spanish Cedar. El Cedro is brewed with Texas Hill Country well water, 100% organic malt (Two Row, Carapils and Wheat), Millenium, Cascade, Columbus and Citra hops, farmhouse and Brettanomyces yeasts, and Spanish Cedar spirals. After primary fermentation with farmhouse yeast, El Cedro is dry hopped with Citra hops and aged for weeks with Spanish Cedar spirals. It is unfiltered, unpasteurized and naturally carbonated through re-fermentation with Brettanomyces yeast.

Bottle. Hazy yellow, whitish head. Barnyard, hay and wood on the nose. The citrus fruits are there too. Funky pineapple, some citrus and that spicy cedar woodyness in taste. Refreshing and quite good drinkability in this brew. Bit of herbs and funky spicyness in finish. While this being quite crisp, I believe it would be an excellent one for the summer.

Clear blonde with a bubbly white head, becoming hazier with each pour. Tropical aromas with some leathery Brett and hints of cedar. Intense carbonation, sweet, fruity, dry leathery finish with some astringency and lemony notes. A bit heavy, boozy on the finish. Nice altough it was surely better in it’s younger âge...

Batch #6 bomber - Light clear golden color. Unique and wonderful aroma of pungent grapefruit, lemon, spruce, fresh cedar, bitter orange zest and hint of sage. First mouthful is amazing! Like no other beer. Very layered. Flavors include big unique citrus like white grapefruit juice, cedar oil, juniper berry, lemon balm, pickle juice and clove. Almost like a perfumed sour. Wow

Batch 2 dated Jan, 2013. Major gusher losing easily losing about 5 oz. out of the bottle. Fucking geyser all over my buddies kitchen. Looks like grapefruit gold with fluffy head. Aroma is nice, light Brett funk, black pepper, and wood. Flavor shows funky yeast, citrus, tropical fruit and a spicy pepper finish. Holy shit, this is damn pretty nice.

This is batch 2. We lost about 28% of the bottle to a gushing. Bottle was room temp, not moved recently. So the appearance is a bit messed up since the yeast cake got all stirred up. Bottled on January 2013. Very hazy and dark orange. 1 finger creamy head with a yellow sheen. The nose is amazing. Just fresh cedar plank, wood chips, really gorgeous! I get pineapple, ginger, loads of delicious fruits.Whoa. this tastes awesome. Cedar for days which I LOVE. This is so pineapple, grapefruit, kiwi and tangerine with a lot of wood. the funk is subdued, sourdough bread, ultra nice no tartness at all except the grapefruit acidity. Dang. I could drink a lot of this.

[5911-20131010] 1pt9.4floz bottle. Herbal straw pencils and lemongrass aroma. Hazy, pale orange yellow body with a long-lasting creamy white head. Lemon grassy hops and mild sweaty flavour has a hot spicy undertone in the finish. Medium body. Tasty but a little too spicy for me. (7/3/7-/3/14) 3.4

bottle-Batch 4 from July 2013 Sampled December 2014 Pours hazy orange with a nice fluffy white head with big bubbles all over. Nose is crazy-lots of cedar, citrus, lemon, orange peal, very subtle citrus here, but the cedar age is so heavy on this. IT sort of reminds me of the cedar aged Jai Ali from Cigar City on the nose. Flavors show the wood age with lots of bright citrus as well. THis beer is 1 1/2 yrs old and it still shows quite a bit of hops. THe yeast created something truely unique-lots of crazy funk along with the woody notes and hops. Its really hard to pinpoint everything that is going on here. Long woody, grapefruity lemony finish with quite a bit of bitterness. I really dig this beer! THe carbonation is a bit on the high side, that maybe the only detracting thing here. still quite good!

Slightly hazy yellow orange in color... Spanish Cedar and citrus hops portend a shockingly vivid grapefruit aroma... Cedar is initially very pronounced, grapefruit and citrus notes come through with a funky Bretty finish... Light citrus and pine hops on palate... Solid ---Rated via Beer Buddy for iPhone
