COMMERCIAL DESCRIPTION
El Cedro, an 8.0% ABV farmhouse ale dry-hopped with Citra hops, aged with Spanish Cedar spirals and bottle conditioned with Brettanomyces yeast. It combines tropical, fruity hop flavor and aroma with funky, barnyard yeast character and the unique flavor and aromatics of Spanish Cedar. El Cedro is brewed with Texas Hill Country well water, 100% organic malt (Two Row, Carapils and Wheat), Millenium, Cascade, Columbus and Citra hops, farmhouse and Brettanomyces yeasts, and Spanish Cedar spirals. After primary fermentation with farmhouse yeast, El Cedro is dry hopped with Citra hops and aged for weeks with Spanish Cedar spirals. It is unfiltered, unpasteurized and naturally carbonated through re-fermentation with Brettanomyces yeast.

Bottle:   Straw, very thick and hazy, large frothy white head, nice lacing.   Big cedar and ruby red grapefruit nose.   Oh, and some more cedar.   Very strong cedar and hoppy citrus bits on the tongue.   Not so much the ruby red grapefruit that I got on the nose.   Lots of cedar, strong front to back.   Slightly barnish as well, a bit musty.   Slightly wheaty on the backside.   Body and mouthfeel are moderate.   Very different, and welcomed.   The cedar could be toned down just a touch, but otherwise its a very interesting and unique beer.   Thanks Bill!

Bottle. Golden orangish pour, with a slight haze and a white rocky head. Citrusy, a fairly strong cedar presence but not overpowering, tropical fruit, lemon grass, bitterness, grapefruit, and some balancing malty sweetness. I liked it.

750mL bottle. Pours a murky orange-golden color with a large rocky white head. Aroma is dominated by a spicy cedar component, with some citric hoppiness. Ruddy pine hop flavors and a spicy, almost medicinal cedar flavors up front, giving way to light and fruity malt backing. Hop and cedar astringency linger in the finish, with a very dry mouthfeel.

On tap at Churchkey during CBC week. Pours a hazy orange with some thin, white head. Nose of wood shavings, citrus, pine, grapefruit, a little tobacco. Flavor is malty, orange, cedar, pine, rosemary, grapefruit. Full, dry, citrusy finish. Nice.

Bottle shared @ Oakquinox. Cloudy orange pour with a huge white head. The cedar aroma is quite pronounced. Lemon, peach, grass, and hints of tropical fruit. Maybe a touch of smoke? The cedar flavor is not as intense as I feared, but still present. Nice citrus notes, some peach, tropical fruit, and a fair amount of grass. Light lemon tartness on the finish. Quite dry, very little malt sweetness.
