El Cedro, an 8.0% ABV farmhouse ale dry-hopped with Citra hops, aged with Spanish Cedar spirals and bottle conditioned with Brettanomyces yeast. It combines tropical, fruity hop flavor and aroma with funky, barnyard yeast character and the unique flavor and aromatics of Spanish Cedar. El Cedro is brewed with Texas Hill Country well water, 100% organic malt (Two Row, Carapils and Wheat), Millenium, Cascade, Columbus and Citra hops, farmhouse and Brettanomyces yeasts, and Spanish Cedar spirals. After primary fermentation with farmhouse yeast, El Cedro is dry hopped with Citra hops and aged for weeks with Spanish Cedar spirals. It is unfiltered, unpasteurized and naturally carbonated through re-fermentation with Brettanomyces yeast.

Draught at CBC. Creamy white good mostly lasting head. Yellow colour. Moderate malty and hoppy aroma. Nice brett notes. Moderate bitter wonderfull flavor. Long moderate bitter finish. Creamy palate.

On tap at CBC, pours a cloudy yellow with a large white head. Very aromatic nose, with loads cedar, brett, and piney hops -- awesome combo. Flavour brings out awesome cedar notes upfront which dominate, a little brett and subdued hops. The cedar is front and centre here, overtaking the brett and hops. Decent stuff.

Bottle shared at Great Taste ticket line (Madison, WI). Pours a murky golden hue, dulled applesauce hue, frothy brighter white head atop dies to a film, laces well and sticks around. Aromas are cedar, bread, and some wood. Touches of funk, cobwebs, and bready malts. A bit of fruit, pineapple and pear. Some apple, gentle sweetness, the cedar really asserts itself. Initial is medium bodied, bigger woody cedar presence, earthy, touch of bretty funk, cobwebs work with a bit of woody spice. Mellow apple, pear, and doughy sweetness. Quite dry and tannic, big cedar, funky brett provides a more dry synergy. Dust, cobwebs, spicy cedar, earthy bitter dry hops. Lingering spice and yeast as we trail out, spicy, dry and bitter. The yeast and dryness, spice from the hops and cedar are a bit more dominant. Not bad. A bit brash at times.

Draught at CBC 2013. Clear golden coloured with a huge white head. Fruity aroma of hops, citrus peel and pine needles with notes of barnyard. Fruity flavour of hops, barnyard and pine needles. Dry hoppy finish.

Tap at CBC 2013. Pours clear golden with a white head. Aroma of citrus, grapefruit, grass, biscuit and light pepper. Flavor is light sweet and moderate bitter. Medium bodied with soft carbonation.

Bottle shared in the GTMW ticket line, pours a hazy yellow with a thin head, the aroma is a little barnyard with some yeast and brett, some of the hops come through with a slight citrus, a lot going on here, the flavor has some hops on the front end with the dry finish of brett and yeast, the cedar really comes through as well, not a cedar bomb by any means but you can tell it’s been aged with it, interesting.

Sampled @ CBC 2013. Lightly hazy yellow color, small white head. Smell and taste lightly sourness, fruitpeel, bitterness, a bit fruity. Not bad, interesting one.

UPDATED: MAY 27, 2013 Hazy orange pour with a lasting white. Tons of lacing. Aroma is brett, citrus rind, pine, and cedar. Taste is brett, grapefruit, pine, spicy hops, and cedar. Funk aftertaste. Dry finish. Cedar seemed to come through more in the second glass from the bottle.

Draught at CBC 2013. Pale golden beer with a white head. Hoppy floral aroma, hay, grass, citrus, elder, pine needles. Pine needles flavor, cedar, brett notes, perfume, woody, hay, floral, some spices.
