COMMERCIAL DESCRIPTION
El Cedro, an 8.0% ABV farmhouse ale dry-hopped with Citra hops, aged with Spanish Cedar spirals and bottle conditioned with Brettanomyces yeast. It combines tropical, fruity hop flavor and aroma with funky, barnyard yeast character and the unique flavor and aromatics of Spanish Cedar. El Cedro is brewed with Texas Hill Country well water, 100% organic malt (Two Row, Carapils and Wheat), Millenium, Cascade, Columbus and Citra hops, farmhouse and Brettanomyces yeasts, and Spanish Cedar spirals. After primary fermentation with farmhouse yeast, El Cedro is dry hopped with Citra hops and aged for weeks with Spanish Cedar spirals. It is unfiltered, unpasteurized and naturally carbonated through re-fermentation with Brettanomyces yeast.

One of my favorite Jester King beers. They really nailed the wood/hop ratio. The citrus and cedar flavors perfectly balanced out on this one.

UPDATED: FEB 13, 2014 A gusher when opening, but saved most of the bottle. Cloudy yellow pour, MASSIVE head, like 95% of the glass. Nose is mainly cedar, lighter citrus notes. Lots of cedar taste here - A bit soapy but that disappears while drinking. Citrus peels, some sourness, wheat. Lively carbonation.

750ml bottle pours cloudy pale yellow with big head. Nose is tropical fruit, grapefruit, mango, with a nice balanced brett funk. Taste is slightly tart dry earthy brett fruit and tropical hops. Pillowy mouthfeel. Finish is dry funky brett, mild tart citrus, hops. Really nice.

Bottle@home with saxophone Mads. Hazy yellow. Huge four finger head. High carbonation. Intens pineapple peach fruity notes blended cheddar wooden aromas. Flavours the same more citrus resin. Light tart dry Brett. Long dry mouthfeel. Only one remake ; great.

Botella. Madera, cítricos y bretts. Excelente trabajo de levaduras con las notas de cedro muy aromática y compleja en boca. Muy fácil de beber a pesar de lo empalagoso que a veces resulta el cedro.

750 ml bottle shared by phalslu in April 2013. Pours a hazy golden color with a medium sized white head. The aroma and flavor have dry Brett funk, grapefruit citrus, grass, wheat, floral notes, cedar, bready malts with light tropical notes. Interesting beer here, quite a bit going on.

Bottled. Pours a hazy gold with a huge cream-colored head. Brett and Citra play together very well along with a very yeasty flavor that mixes well with the cedar character. Very interesting

750 ml. bottle. Pours a thick, well retained, fluffy white head, with some lacing, over a slightly hazy, orange yellow (SRM 5) body....nose is heavy citrus peel, pine, light barnyard funk....taste is heavy citrus peel, light funk, hints of cedar, finishing with a moderate bitterness.....mouth feel light, alcohol hidden, carbonation low with light acid finish. This is a very interesting, complex and well done beer. While it does not really fit well into any particular style, it is interesting. The wood and Brett were lightly handled and add without dominating. Unfortunately the same sould not be said about the Citra. BJCP 8/3/15/4/7

Bottle. Pours cloudy golden with a white head.Aroma of funk, herbal hops, cedar wood , some spicy notes and citrus. Flavor is sweet and funky with some barnyard, cellar, citrus, some spicy notes and malt. Medium body, average carbonation.

Pours hazy golden with a huge white head. Aroma has notes of malt, yeast, brett, pineapple, cedar, spices, citrus and grape. Taste is light to medium sweet and light to medium bitter with a long fruity and brett finish. Body is medium, texture is oily, carbonation is soft.
