COMMERCIAL DESCRIPTION
El Cedro, an 8.0% ABV farmhouse ale dry-hopped with Citra hops, aged with Spanish Cedar spirals and bottle conditioned with Brettanomyces yeast. It combines tropical, fruity hop flavor and aroma with funky, barnyard yeast character and the unique flavor and aromatics of Spanish Cedar. El Cedro is brewed with Texas Hill Country well water, 100% organic malt (Two Row, Carapils and Wheat), Millenium, Cascade, Columbus and Citra hops, farmhouse and Brettanomyces yeasts, and Spanish Cedar spirals. After primary fermentation with farmhouse yeast, El Cedro is dry hopped with Citra hops and aged for weeks with Spanish Cedar spirals. It is unfiltered, unpasteurized and naturally carbonated through re-fermentation with Brettanomyces yeast.

Pours a thick, well retained, fluffy white head, with some lacing, over a slightly hazy, orange yellow (SRM 5) body....nose is heavy citrus peel, pine, light barnyard funk....taste is heavy citrus peel, light funk, hints of cedar, finishing with a moderate bitterness.....mouth feel light, alcohol hidden, carbonation low with light acid finish. This is a very interesting, complex and well done beer. While it does not really fit well into any particular style, it is interesting. The wood and Brett were lightly handled and add without dominating. Unfortunately the same sould not be said about the Citra. BJCP 8/3/15/4/7

Bottle. Pours cloudy golden with a white head.Aroma of funk, herbal hops, cedar wood , some spicy notes and citrus. Flavor is sweet and funky with some barnyard, cellar, citrus, some spicy notes and malt. Medium body, average carbonation.

Pours hazy golden with a huge white head. Aroma has notes of malt, yeast, brett, pineapple, cedar, spices, citrus and grape. Taste is light to medium sweet and light to medium bitter with a long fruity and brett finish. Body is medium, texture is oily, carbonation is soft.

Bottle, 75cl. A slow gusher, producing a finger-thick, white head over an unclear, golden-orange body. The aroma has lots of cedar, with pine cones, oranges and a faint malty touch. It’s full-bodied and quite carbonated, faintly warming, and sweetish. Oranges, cedar and pine cones in the flavor, some malty sweetness. Woody, cedar finish with orange peel and some grapefruit. Sort of one dimensional this one, but very pleasant and tasteful, especially since it’s combined with some brett. Shows cedar is very good for beery use. 131231

Warm cedar and pine, celery and leeks, pickling spices, citrus notes and funk, this is one fun ride. The brett shows up nicely as the beer warms up rounds out to more peppery pineapple and citrus. The cedar is pretty intense but does not overwhelm. El Cedro drank pretty smooth for 8% and was all around one of the most complex beers of the night.

750ml bottle shared by someone in the GTMW ticket line. Thank you! Unfiltered orange-tan. Fluffy head. Pronounced dry brett aroma. Mellow, creamy yeast tones. Really well done, enjoyable beer. Easy going and well balanced.

750 ml bottle poured a cloudy golden amber with a lasting off white head. Aromas of cedar, horse blanket, straw, grapefruit, pine and lemon zest. Palate was medium bodied and smooth with a dry finish. Flavors of cedar, straw, horse blanket, citrus and light pine with a smooth dry lingering funky cedar finish.

Good friend brought a bottle up to share. Nice nose of citra hops and oils. I like my citra fresher and not dry hopped but the high alcohol masks any of the palate flavors. Interesting taste from the water as well. Would like another go at this one.

Tap. Pours cloudy, almost milky golden, medium white creamy head, great lacing. Large aroma of citrus, yeast, pineapple, grapefruit, Brett, wood. Flavor is about the same, light sweet, fruity citrus, Brett tang, light funk, light bitter with a zesty sharpness to it. Belgian IPA in my book, and a good one. Medium body, low carbonation, creamy mouthfeel.
