Very interesting beer. Aroma was extremely cedar forward, with a bit of funk. Taste was funky, slightly sour but not really, with some very subtle hoppy bitterness. Interested to see how the other two bottles in my cellar will age.

Bottle: Hazy amber body with a foamy white head that settles rather quickly. Lots of peppery & woody spices all around; you can definitely smell & taste the cedar. Super woodsy, reminds me a little of a cigar humidifier even with some notes of earthiness & tobacco. Kind of tastes salty, too, with a brine-like finish. A little bit of tartness & some modestly funky barnyard notes from the brettanomyces, but certainly understated compared to the spicy cedar. Lightly floral with notes of peppercorn in the finish.

Bottle. Pours hazy gold with a white head. Nice woody cedar base, some spicy yeast, light fruity sweetness, and some faint rustic notes. Good stuff.

Not bad, nice mellow bubblegum aroma, somewhat sugary. Tasted banana cloy sweet but not too overpowering in each respect. Decent finish, slight warmth, decent brew.

Little cloudy pale orange to yellow beer, creamy white head, pretty stable, bit adhesive. Aroma: lots of cedar, soapy, deodorant, very weird. MF: lots of carbon, medium body. Taste: way too much of that cedar stuff, no subtleties, very bitter, wood, tannins, meh. Aftertaste: very soapy, unpleasant bitterness, weird. I don’t like this one little bit.

1.5 year old bottle. Almost a gusher. Poured 99% foam and 1% beer. After 10 minutes of settling and pouring, I had this:
Anyway, that’s what it looked like. Aromas of funky brett and wood. Taste is bitter and funky. Flavors of cedar and sweaty Brett. Bone dry. I guess this kind of dried out during the past year and a half due to the brett and really built up some carbonation. Pretty nice metamorphosis. The end result is a woody funk train, bone dry and cracklingly decadent. Really glad this beer had time to bottle condition with the Brett, as it turned out amazing. Finishes woody, dry and Brett-tastic. Very nice and an amazingly unique experience!

750ml bottle, batch 3, honey gold color, with a big frothy white head, nice will bretty, funky yeast, dusty, barnyard, spicy cedar woody nose, with a mild floral leafy, citrusy, grassy hop, faint lemon juice accent,with a lemongrass, pine bark, bread dough note in the aroma follows through on a medium-bodied palate, with a good funky, bretty, fruity yeasty, cedar wood barrel, earthy floral cedar bushes and trees, flowery leafy, grassy, cedar hoppy character, with some dusty, lemon, lime rind, light acidic lemon juice, spicy peppery, doughy flavours, leading towards a funky, bretty yeastiness, woody cedar, dry leafy, grassy, citrus hop bitterness finish.

This was poured into a tulip.
The appearance was a nice hazy golden orange to yellow color with a slight ability to see small carbonation bubbles rising at the edges . There was a two finger white foamy head that dissipated within about a minute leaving some light spider web lacing.
The smell was absolutely amazing through a piney/resinous aroma with a nice entanglement of lemon zest, lemongrass, sweetened freshly cut grass and cracked pepper.
The taste takes those flavors and jumbled them up to practically perfection. The aftertaste, probably one of the absolute best aftertaste I’ve ever encountered in any beer. Okay, it’s a long intriguing sticky sweet lemon with a slight dry touch from the lemongrass that lets in a tad of refreshing tropical fruitiness. The finish is sticky and sweet that brings in a light grapefruit with a light sweet grassiness to it.
On the palate, this one sat about a light to medium on the body with a fairly decent sessionability about it. Would I have this with food? I might if I could get it again. At the beginning of the beer, the carbonation felt a bit sharper but as the beer warms, it really smooths out.
Overall, hot damn! Way to knock one outa the park, Jester King! When are you going to sending your beers to Alaska? Don’t make me have to trade for this again.

75cl bottle at Gainsbar in Kortrijk - Belgium. Pours a amber orange color with white head. Light aroma of pepper and cedarwoord, very carbonated but still balanced, slightly bitter bretty finish. Lovely.

Pours a hazy light yellow with a large loose white head. The smell is a big white pepper, cedar, fruit, orange. The taste is fruit, pepper, cedar, spice. Light + with soft elegant carbonation.

Bouteille 75cl @ RBBSG III, courtesy of omgrich. Troisième bière utilisant du cèdre pour cette session, avec encore une fois un rappel prononcé à CCB.
Dorée, léger trouble, col fin blanc.
Arôme est dominé par le cèdre. Fruité houblonné arrivant en rétro-nasal et apportant une très belle palette de fruité, léger noble, malt cara pâle avec un brett qui ne profite pas de la force du cèdre.
Palais met ici aussi le cèdre bien en avant. Houblonné fruité notamment sur un niveau citronné frais et léger tropical. Léger épicé - boisé venant du cèdre mais aussi du Simcoe plus un léger pin qui s’estompent un peu avec la présence du cèdre. Pour 8%, reste très, voire trop, facile à boire.
Au final, bière agréable qui reste plus appréciable que la version de To Ol et un peu moins balancée que celle de CCB.
