COMMERCIAL DESCRIPTION
El Cedro, an 8.0% ABV farmhouse ale dry-hopped with Citra hops, aged with Spanish Cedar spirals and bottle conditioned with Brettanomyces yeast. It combines tropical, fruity hop flavor and aroma with funky, barnyard yeast character and the unique flavor and aromatics of Spanish Cedar. El Cedro is brewed with Texas Hill Country well water, 100% organic malt (Two Row, Carapils and Wheat), Millenium, Cascade, Columbus and Citra hops, farmhouse and Brettanomyces yeasts, and Spanish Cedar spirals. After primary fermentation with farmhouse yeast, El Cedro is dry hopped with Citra hops and aged for weeks with Spanish Cedar spirals. It is unfiltered, unpasteurized and naturally carbonated through re-fermentation with Brettanomyces yeast.

Clear medium orange yellow colour with a large to huge, frothy to creamy, good lacing, fully lasting, white to off-white head. Aroma is moderate malty, fruity, moderate to heavy hoppy, fruity, moderate to heavy yeasty, brett, pepper, cedar wood, wood, fruity - citrus - orange - apricot. Flavour is moderate to heavy sweet and light heavy bitter with a long duration, fruity, peppery, wood - cedar, brett, hoppy, dry. Body is medium, texture is oily, carbonation is soft. From tap. Pours cloudy yellow with a small white head. Aroma is soapy and spiced, light herbal to grassy. Herbal and spiced. Dry and bitter finish. Simple spiced. Bottle version was crisp, citrusy and bretty, lovely.

Draught at CBC 2013. Clear golden coloured with a huge white head. Fruity aroma of hops, citrus peel and pine needles with notes of barnyard. Fruity flavour of hops, barnyard and pine needles. Dry hoppy finish.

CBC. Hazy gold beer, good pale cream coloured head. Palate is crisp and dry. Very odd tasting beer, in a very good way! Lovely bretty crispness supports distinct roses and violets! Mild minerals and a crisp finish!

Bottle, 75cl. A slow gusher, producing a finger-thick, white head over an unclear, golden-orange body. The aroma has lots of cedar, with pine cones, oranges and a faint malty touch. It’s full-bodied and quite carbonated, faintly warming, and sweetish. Oranges, cedar and pine cones in the flavor, some malty sweetness. Woody, cedar finish with orange peel and some grapefruit. Sort of one dimensional this one, but very pleasant and tasteful, especially since it’s combined with some brett. Shows cedar is very good for beery use. 131231
