Over time our beer making has been increasingly driven by the seasons. We make farmhouse ales when the weather is hot and temperatures are conducive to fermentation, and we make spontaneously fermented beers and barrel fermented beers when temperatures are cold and conducive to overnight inoculation of wort and slow maturation in oak. We also use the ingredients that are available to us at various times during the year. In the spring we make beer with strawberries and blueberries, in the summer we use apricots and cherries, and in the fall we use grapes. Hibernal Dichotomous — our winter saison — is a beer that’s reflective of the ingredients that are available to us during the winter months.

Returning to the practice of bière de coupage or beer that is “cut”, Hibernal Dichotomous is a blend of young farmhouse ale (63%) brewed this past November, mature barrel aged beer brewed with lavender, rosemary and spearmint in November of 2012 (25%), and fresh pressed watermelon juice (12%). The watermelons we juiced for Hibernal Dichotomous came from this winter’s harvest.

Hibernal Dichotomous is 5.8% alcohol by volume, 12 IBU, 3.3 pH, 4 SRM, and has a finishing gravity of 1.000. Both the young and old beer in the blend were brewed with barley, wheat, hops and Hill Country well water and fermented with a blend of brewer’s yeast and microorganisms native to the ranch land where our brewery is located.

Bottle. Pale pour. Nose of spearmint, almost like Listerine. This tastes completely different than it smells. Lots of earthy, spicy rosemary with a sweet body of watermelon. This was a crazy, fantastic beer.

Bottle shared by Brian, thanks! Pours a cloudly light yellow with a white head that dissipates completely. Aroma has perfume and tropical fruit notes with a bit of lavender and light grains. Flavor begins with passion fruit and a light tartness with underlying notes of clove and menthol in the finish.

Hazy white, small white head. Sweet aroma with some sweet funky aroma. Sweet, white pepper, a bit funky. Nothing special.

Bomber. Murky yellow-gold pour with a small soapy white head. Floral. Watermelon. Spices - like thyme. Dry finish. Very nice.

Bottle shared by Brian at Steazy’s - thanks!! Hazy light yellow pour, slight white head. Interesting slightly floral nose. Lightly tart and herbal, slight clove spice in there. Soft. Slight lemon finish.

750 ml bottle from Errl - thanks again! - that I shared at the hotel room bottle share over Jackie-O’s 9th Anniversary weekend. Pours a hazy gold with an off-white head. Notes of lemon and lime citrus, watermelon, herbs, fresh-cut grass, honey, and florals. Light-bodied, with moderate carbonation and a tart, fruity, floral mouthfeel. Really well done.

Bottle shared. Pours a hazy yellow with a white head of foam. The aroma has the rosemary and mint, but the watermelon doesn’t come in much until you taste it. Then, I get a watermelon jolly rancher taste. It’s pretty good. I had my doubts about this beer, but it was a surprisingly good one.

Sample at a bottle share, post Jackie-O’s 9th Anniversary. Totally hazy golden yellow color. Thin off-white head. Dots and bits of lace. Ingredients suggest lots of floral aromas... Get lots of pleasant floral aroma, lots of wildflower honey aroma too, Very satisfying moderate sour tart taste, light to moderate sweet. Drinking a lot like the West End Imperial Mead I had earlier tonight... Lots of satisfying floral cider and floral aromas. Medium to bigger body. Smooth, kind of chewy, lighter carbonation, kind of soft. Very nice sour floral saison. As far as a sour saison goes, this one is definitely a sour saison, with nice herbal floral features. Fun stuff...

Sample at the 2014 Infected Chimipalooza on 11/01/2014. Slightly hazy pale yellow color with a thin white head that recedes quickly to an outer ring. Short strings of lacing. Fruity aroma with floral wheat and malt notes. Light to medium body with flavors of herbal wheat, citrus, watermelon and a bit of yeast. The finish is floral and fruity. Decent overall.
