COMMERCIAL DESCRIPTION
Over time our beer making has been increasingly driven by the seasons. We make farmhouse ales when the weather is hot and temperatures are conducive to fermentation, and we make spontaneously fermented beers and barrel fermented beers when temperatures are cold and conducive to overnight inoculation of wort and slow maturation in oak. We also use the ingredients that are available to us at various times during the year. In the spring we make beer with strawberries and blueberries, in the summer we use apricots and cherries, and in the fall we use grapes. Hibernal Dichotomous — our winter saison — is a beer that’s reflective of the ingredients that are available to us during the winter months.

Returning to the practice of bière de coupage or beer that is “cut”, Hibernal Dichotomous is a blend of young farmhouse ale (63%) brewed this past November, mature barrel aged beer brewed with lavender, rosemary and spearmint in November of 2012 (25%), and fresh pressed watermelon juice (12%). The watermelons we juiced for Hibernal Dichotomous came from this winter’s harvest.

Hibernal Dichotomous is 5.8% alcohol by volume, 12 IBU, 3.3 pH, 4 SRM, and has a finishing gravity of 1.000. Both the young and old beer in the blend were brewed with barley, wheat, hops and Hill Country well water and fermented with a blend of brewer’s yeast and microorganisms native to the ranch land where our brewery is located.

Bottle thanks to Jstax ! Pours a light golden color with a finger plus of white foam. Nice herbaceous nose with hints dry hay, lavender, mint and a hint of dusty funk. Palate follows with much more watermelon influence than detected in the nose. Nice backbone of watermelon jolly ranchers that supports the herbaceous tart body of the beer. Different flavor profile than your average saison and highly enjoyable !

Bottle... Pours cloudy and straw-colored with a brief, white head. The nose is yeasty, fruity and bright with notes of citric acid and fuzzy fruits. Light-bodied and a touch raspy with lazy carbonation. The flavor is tart, lightly grainy and mildly fruity - the watermelon is really identifiable here. Crisp, tart, dry finish. 750ml bottle shared thanks to Lukaduke! Pours bright hazy yellow with small head. Nose has dusty hay, herbal spice, bright fruit, light funk. Taste is big watermelon candy bomb, jolly rancher, some sublte funk and spice and hebal citrus, some hay. Finishes with soft lemon spice and some sweet candy watermelon and honey dew notes, spice. Light bodied easy drinker. Tasty stuff.

Poured a cloudy darker yellow color with aromas of light rosemary and mint. Flavors were subtle watermelon, light fruit, hay, mint and some rosemary. A lot going on but dug this one.

bottle shared by tom10101 or is it mathieuc, thanks anyhow. pours hazy pale yellow with a small white cap, although reviving in a healthy manner, nice lacing sticking. very floral - coriander, even though there is none apparently; tart fruitiness - miscellaneous, vanilla oakiness, sulfur, belgian yeast, bretts and other bugs. average carbonation, light acidity - nice complexity, light body, tart and herbal-spicy finish. nice.

Bottle at a tasting. I liked this. Cloudy yellow. Lots of spice, clove; wild grasses, lavender, and a lot of it; and lemon. Dry and spicy. good.

Pours a really hazy yellow with a medium white head that leaves nice lacing. Nose is of spices and fruits, fresh fruits and fresh spices. Really fragrant. Taste is of yellow fruits and really fresh again from the spices. Body is light to medium and carbonation moderate. I quite enjoyed it!

Bottle 750ml. Pours hazy orange with low white head. Some lacing. Aroma is of vanilla, chamomille, perfume. Taste is of fruits, chamomille, herbal tea. Palate: Light body. Soft-medium carbonation. Overall: Good. A bit perfumy. Nice.

Appearance: Clear bright golden with a small white head and little lacing.

Aroma: Lavender forward with minty notes, perfume and strawberries notes.

Taste: Lavender is the main feature here again with perfumy notes, light minty presence, strawberries, light peppery notes and cerals,

Palate: Medium body. Moderate carbonation. Grainy. Herbal tea aftertaste.

Overall: Too lavander forward for my liking and I think it hinders the balance. It’s still a decent Saison and there’s nothing off, but it’s not nearly as cohesive as what Jester King is usually able to do.

Bottle. Pale pour. Nose of spearmint, almost like Listerine. This tastes completely different than it smells. Lots of earthy, spicy rosemary with a sweet body of watermelon. This was a crazy, fantastic beer.
