COMMERCIAL DESCRIPTION
Over time our beer making has been increasingly driven by the seasons. We make farmhouse ales when the weather is hot and temperatures are conducive to fermentation, and we make spontaneously fermented beers and barrel fermented beers when temperatures are cold and conducive to overnight inoculation of wort and slow maturation in oak. We also use the ingredients that are available to us at various times during the year. In the spring we make beer with strawberries and blueberries, in the summer we use apricots and cherries, and in the fall we use grapes. Hibernal Dichotomous — our winter saison — is a beer that’s reflective of the ingredients that are available to us during the winter months.

Returning to the practice of bière de coupage or beer that is “cut”, Hibernal Dichotomous is a blend of young farmhouse ale (63%) brewed this past November, mature barrel aged beer brewed with lavender, rosemary and spearmint in November of 2012 (25%), and fresh pressed watermelon juice (12%). The watermelons we juiced for Hibernal Dichotomous came from this winter’s harvest.

Hibernal Dichotomous is 5.8% alcohol by volume, 12 IBU, 3.3 pH, 4 SRM, and has a finishing gravity of 1.000. Both the young and old beer in the blend were brewed with barley, wheat, hops and Hill Country well water and fermented with a blend of brewer’s yeast and microorganisms native to the ranch land where our brewery is located.

Bottle share gathering at Bruce’s. Thanks to Theydon_Bois. Hazy pale gold beer, little white head. Limey nose. Palate is light, dry and crisp. Tart lime, little salt. Mild cucumber and a touch of sherbet. Light dry finish. Bitterish cucumber linger. Interesting!

Bottle in Glenwood Springs, thanks to Steve_0. Pours a hazy light yellow appearance with a white head. Green herbs, lemon, light funk, wheat in the nose. Somewhat tangy, floral, dandelion, watermelon, juicy fruit flavor. Actually tons of watermelon. Juicy and refreshing while still kind of a weird flavor.

Bottle shared at Bruce’s place. Thanks to Colin for this one. Light straw yellow coloured pour with a lasting white head, aroma is fresh lime, mint leaves, crisp, mineral, salt, cucumber. Flavour is composed of lime leaves, straw, sharp, straw, wheat, mojito, little sharp, semi puckering. Palate is crisp, straw, slight sour, highish carbonation. Tangy lime a little coconut and sharp. Good stuff.

Bottle split at Bruce’s, from an IP trade with a texan dude, 06/03/15. Hazed orange yellow with a moderate off white head. Nose is tangy citrics, spice, apricot, light menthol notes. Taste comprises lime jus, tangy citric rinds, straw, light farmyard, damp hay, herbal notes, touch of germaline. Medium bodied, fine carbonation, semi drying close. Ok saison but probably one of the weaker beers I’ve had from Jester King.

Bottled 2014, ’Blend #1’, 5.8%. Pale yellow, almost luminous, pretty still, small ring of white head. Aroma has lots of lime, pine. Body is medium, smooth, tingly carbonation. Taste is mostly Mojito cocktail, cucumber and lime, spearmint, tangy sweet, dry, no real bitterness.

Bottle thanks to Colin. It pours cloudy yellow with a small white head. The nose is bready, lightly, funk, apricot, sherbet, gooseberry, vanilla, barnyard, musty and dirt. The taste is crisp, tart, lactic, citrus rind, gooseberry, white grape skin, grapefruit, sherbet, good mouth-pucker, light menthol and good deal of acidity with a dry finish. Medium body and average carbonation. Aroma is pretty musty, but it tastes rather nice.

Bottle shared in London - many thanks to Colin. Pours hazy yellow with a frothy white head. The aroma has some rindy lemon and lime, menthol, spruce. Light sweet flavor with some tangy citrus fruits, pine, minty menthol, pale wood. Light bodied with fine carbonation. Finishes with moderate sweetness, mellow acidity, some funk, lemon, peach. Not bad.

Bottle thanks to Jstax ! Pours a light golden color with a finger plus of white foam. Nice herbaceous nose with hints dry hay, lavender, mint and a hint of dusty funk. Palate follows with much more watermelon influence than detected in the nose. Nice backbone of watermelon jolly ranchers that supports the herbaceous tart body of the beer. Different flavor profile than your average saison and highly enjoyable !

Bottle... Pours cloudy and straw-colored with a brief, white head. The nose is yeasty, fruity and bright with notes of citric acid and fuzzy fruits. Light-bodied and a touch raspy with lazy carbonation. The flavor is tart, lightly grainy and mildly fruity - the watermelon is really identifiable here. Crisp, tart, dry finish. 750ml bottle shared thanks to Lukaduke! Pours bright hazy yellow with small head. Nose has dusty hay, herbal spice, bright fruit, light funk. Taste is big watermelon candy bomb, jolly rancher, some sublte funk and spice and hebal citrus, some hay. Finishes with soft lemon spice and some sweet candy watermelon and honey dew notes, spice. Light bodied easy drinker. Tasty stuff.
