In October 2013 Jester King began brewing this beer using indigenous wild yeast and souring bacteria. All bottles from Batch 11 onward should be under this rating.

Bottle. Frothy White good mostly lasting head. Yellow colour. Moderate malty and hoppy nice citrus aroma. Moderate bitter flavor. Average loght bitter finish. Oily palate.

UXO (526) - CANADA - JAN 31, 2015
Pours cloudy pale straw with one finger of loose white head diminishing rapidly to a thin skim, spotty lacing. (3/5) Nose is lemon zest, brett funk, hay, apples and pears, very light crackery malt. (7/10) Taste is moderate sweet, moderate tart, mild bitter. (7/10) Light body, prickly to moderate carbonation, crisp tart finish. (4/5) Well, that’s unexpected - a restrained, funky, Franco-Belgian style farmhouse saison, from Texas. Cider and champagne characteristics, with a lovely light and crisply carbonated body. Quite refreshing, and yes, it would make an excellent table beer with a light meal. Really, my major complaint is that it’s, if anything, too mild. I don’t mean just the ridiculously low ABV (at under 3%, it’s barely “beer”, is it?) but the total package: the aroma, flavour, and body are all so well-behaved as to barely be present at all. I’d love to see this with its restraints removed, actually... (14/20)

Bottle @ Kristrup tasting. Pours light yellow with a white head. Aroma of light malt, yeast, grass, light spicy, sweet flowers. Flavor is light malt, yeast, spice, light citrus, grass, flowers. Thin to medium body, average to lively carbonation. easy drinking, and great taste for the ABV. 310115

Bottle. Pale yellow colour with small creamy white mostly lasting head. Funki aroma. Sweet flavor.

750 ml bottle thanks to errl. Poured into a goblet-ish style glass. Pours a very pale yellow with a big white head of foam. Good retention. The aroma has funk, grass, tartness, citrus zest. Taste is a little bready and grassy with a definite funk character. Light body. Medium carbonation. Pretty damn good. Sessionable for sure.
