In October 2013 Jester King began brewing this beer using indigenous wild yeast and souring bacteria. All bottles from Batch 10 onward should be under this rating.

750 ml bottle, Batch #10, October 16, 2013. Served in a Prairie Teku glass, the beer pours a cloudy gold color with a couple inch frothy off-white head. Head retention is very good, and there’s also a lot of lacing. Aroma is yeasty, the brew smells like citrus peel, pineapple, hay, peppery spice, and apricots. It tastes like citrus peel, apricot, tropical fruit, peppery spice, wheat/grainy malt, and earthy funk. There’s a nice tartness noticeable, it’s good and tasty. Mouthfeel/body is medium, it’s a bit coating and is well carbonated. I liked this brew, definitely worth a try! $12.49 a bottle.

From notes Poured from a bottle it is a cloudy golden color with no head. The aroma is sour pineapple and the taste follows fruity sour.

Pours a nice cloudy amber color with white fizzy head. Funk, some tartness, spice, and yeast on the nose; follows onto the palate. Finishes tart and nice and dry with a little spice too. Very good.

Poured from bottle to tulip glass. Hazy straw hue with fluffy white head. Aroma is straw, lactic, peppercorn, earthy, horse blanket. Mouthfeel is nice with a medium light body and fizzy carbonation. Taste is dry throughout with a bitterness in the following and astringent finish. Overall this is a decent brew but more saison than sour.

Batch 13 from a recent trade. Big frothy white head. Lots of bubbles in a light yellow color. Spicey earthy aroma. Flavor is a lot of the same with some banana and toasty grain. Finish is spice again and long lasting. I woke up the next morning with the fruity sticky sweetness still coating my mouth. Tangerine and apricot. Actually kind of fun. Definitely entertaining.
