Pecan Wood Smoked Saison Crafted in the once commonplace, Old World tradition of bière de coupage, young, dry hopped ale is blended with old, barrel-aged sour beer fermented with native yeast. A portion of the malt was smoked over pecan wood at The Salt Lick BBQ in Driftwood, Texas. Unfiltered, unpasteurized and naturally conditioned.

Update: Our original label application for Salt Lick Pecan Wood Smoked Saison was rejected by the Texas Alcoholic Beverage Commission (TABC), after having been approved by the Federal Alcohol and Tobacco Tax & Trade Bureau (TTB). We have renamed this beer "Censored" for sale in Texas.

Pours cloudy, milky yellow with white head. Tart, smoky aroma. Taste is yeast, tart, funky... Salty, smoked wood. Creamy feel. Very, very nice.

Orange color with small white head. Aroma is Laugengebäck pure. Very salty. Taste as well. Quite crazy, but lecker. Koelschtrinker says "ja, aber!"

Bottled. Old note. The aroma has smoke, citrus, bit wood. Hazy, yellow coloured beer with a white head. The taste is slightly sour, has citrus, smoke. Nice experiment but the smoke and sourish character doesn’t seem to blend.

Poured into a tulip. Batch #1, Jan 2013. This gave me quite a nice little clean-up to do when I found some big time gushing. 4.0 A: Murky yellow/orange/brown color. Two fingers of frothy off-white head. Retention is pretty good and lots of lacing is left. 4.75 S: Smells great. The smokiness is so enticing - porcine city. Doesn’t come off as very sour, it’s more of a funky tanginess. Woody, funky with herbalness, rotting wood, and outdoorsiness. Hay and grassiness. A bit of fruitiness. The smokes blends supremely well with the funk. I couldn’t ask for much more. 4.25 T: Taste is also really great. The sourness comes through stronger than the nose. Porcine smoke again, light sourness with plenty of tanginess, woodiness. Funk gives rotting wood, herbalness, outdoors, and hay/grassiness. Peachy fruitiness. 3.75 M: Lighter medium body. Plenty of light, somewhat spritzy carbonation. Supremely smooth. 4.25 D: Very nice beer overall. Awesome nose and great everywhere else. ★ 985 characters DavoleBomb, Aug 05, 2013

Hazy hay yellow, white head. Smoke, peach, tar and bit apricot. Flavour is quite tarish. And sour. Citrus. Leather.

Hazy yellow golden color with a small white head. Smoke... a lot of smoke... yeast, mild bitterness and citrus in the aroma. The aroma is really dominated by the smokiness. Sourness, tar, smoke, yeast, mild bitterness and lemon in the flavor. A bit weird but very rich.

Hazy yellow color with white head. Aroma reminds of a brett heavy saison. Taste is very similar to a lichtenhainer with the smokey-sour combination. The smokey flavors remind me of the traditional german rauchbiers. Very nice combination overall.

Via trade. The aroma is lemon, soke, salty. The appearane is hazy amber, white head. The flavor is smoke, meaty, bacon, salty, lemon. The finish is salty, somky, lemony. Very smoky in flavor. Medium in body. Nice all around.

Bottle. Pours a hazy yellow with a white head. Nose is smoke, bread, some slight nuts, and mild vinegary funk. Flavor is similar with smoke and funk, mild vinegar, and some wheat. Light to medium in body and interesting overall.
