COMMERCIAL DESCRIPTION
Pecan Wood Smoked Saison Crafted in the once commonplace, Old World tradition of bière de coupage, young, dry hopped ale is blended with old, barrel-aged sour beer fermented with native yeast. A portion of the malt was smoked over pecan wood at The Salt Lick BBQ in Driftwood, Texas. Unfiltered, unpasteurized and naturally conditioned.

Update: Our original label application for Salt Lick Pecan Wood Smoked Saison was rejected by the Texas Alcoholic Beverage Commission (TABC), after having been approved by the Federal Alcohol and Tobacco Tax & Trade Bureau (TTB). We have renamed this beer "Censored" for sale in Texas.

750ml bottle. Pours a hazy medium gold, with a large off-white head, which lasts well and leaves good lacing. The aroma has savoury, meaty smoke notes set against a funky sour background, with some leathery notes coming through, as well as a touch of bittersweet apple. Peppery hops up front lead into a touch of oak and some savoury, meaty notes. The sourness shows in the mid-palate, bringing lemon and tart apple skin notes into play, creating an unusual but very pleasant blend with a drying smoky flavour. This blend continues through into the finish, with smoky Scotch whisky becoming more prominent. A lingering whisky sour aftertaste is left behind. This is an incredibly good beer. The blend between smoke, oak and sourness is done with a deft hand, creating a delicious and pretty unique ale.

Bottle. Pours cloudy yellow with a white head. Aroma of smoked wood, some lemon, some funk and fruitiness. Flavor is sweet and somewhat sour with some smoked notes, lemon, fruitiness, yeast and a dry finish. Medium body, average carbonation.

Bottle, 75cl. A gusher, producing an unclear, yellowish orange body and a small, dense, white head. Rather smoked aroma with a citrusfruity touch. Woody and faintly nutty, faintly funky. Quite fruity flavor with lots of citrus. Some pale malts, a good dash of smoke and acidity and some bitterness. Full to medium body, nicely carbonated, quite high. Mostly dry, but with some fruity sweetness. Lasting finish with a nice blend of citrus and smoke, and a zesty bitterness. Tasteful, interesting and pleasant, could easily drink more of this. 140608

Pours slightly hazy golden with a white head. Aroma has notes of malt, smoke, salt, yeast, orange, citrus and hint of lactic acid sourness. Taste is light sweet, light sour and light bitter with a long dry, light smoked, sour and slightly salty finish. Body is medium, texture is thin to oily, carbonation is soft.

Bottle st Babas, Stockholm. Small White head. Very clowdy solid yellow color. Big smiley aroma with Clean Acke bromsa. Freav Acke taste with a bit malty finnish. Very Nice applicera.

750 ml bottle acquired via trade on BA. Thanks! Pours a nice darker amber golden hue, well hazed with a darker slant overall. Frothy offwhite head sits atop and sticks around well overall. Aromas are a bit tart, lactic and gentle smokey and a bit salty. Quite lovely and rich, gentle yogurt but nice straw, smokey bread and earth. Nice stuff. Initial is tart and lively, bigger lemony life with some lactic slant, nice tartness and bready elements. A touch salty, the middle shows a richer smoke element, tasty and luscious, a bit meaty and earthy overall. Sufficient and firm. A bit twangy, lactic, dry and sharp as we hit the backend. Firmer dry sour elements, not sour but firm twangy dryness really hits the palate. A bit smokey, touches of meat, cherrywood and mesquite. Touches of straw, sourness, a bit salty. Really runs the gambit. Firmly sour up front but the smoke kicks up nicely into the middle and backend. A bit lactic, yogurty and sour as we taper out. Nice and sour stuff, smokey, fruity, really does some work. Complex and lovely, especially the nose and as we get further into it.

Pours a hazy golden color with white head. Notes of smoke, pecan, oak, earth, funk, and sour citrus on the nose; follows onto the palate. Weird combination of flavors on this one. More smoke as the beer warms. Not my cup of tea from Jester King.

Bottle - Batch 1 - Funky salty yeast with lime and other citrus and oak smoke notes. Foamy as all hell, nothing worse than watching half a bottle gush out as you open it. Cloudy and hazy gold with a white head. Pecan or woody sweetness is there but quickly gets to the good citrus and salty goodness. A nice interesting Gose, but the oakiness is a bit over the top.

This one poured a hazy darker yellow with a whtiehead. Aroma was of definite smoke, some lemons, wheat and light fruit. Flavor was rustic saisony character with smoke laden background. SDefinitely an interesting blend of flavors
