COMMERCIAL DESCRIPTION
One of Bam's brown eyes is, in fact, black. When mischief reigns supreme, it positively glows. Dedicated to the dark side; smooth, dark, incredibly delicious as only a Jack Russell with bat wings can be.

UPDATED: JUN 3, 2008 Bottle. Wonderful aroma of some lemon zest, oak, some lacto funk, yeast and a hint of brett. Quite pleasing. Pours dark amber/brown with a bright white head. Great on the tongue. Lots of wood tannin hitting you in the back sides of the tongue. Some raisiny tart/sweetness from the malt, but balanced quite nicely. Lively and crisp on the tongue. Finishes with lot of dry wood tannin. Very nice!

Re-rate 6/2/08. The nose on this is still fantastic. Quite tart and sour with a very nice underlying funkiness and plenty of wood tannin. The flavor falls absolutely flat however. Lots of grainy yeastiness with little or no flavor midpalate back. The finish has become quite abrupt and watery. Wholly disappointing.

Pours a dark rich red brown. Relatively clear, but so dark you cannot see through it. Dense this light tan head. The nose is lively, isnít it! Sour tannic bite. A bit of sweetness, but mostly and oaky yeasty Jolly Pumpkin-ness. A bit lactic. Some subtle spice. Small vanilla pulls it together. Nice full body, not overly carbonated, a bit creamy. The flavors are a touch amped up over what the nose would suggest. Tart. BIG oak. Really towering, even by JP standards. Tannic. Subtle spice. Dark malt, with some caramel, but largely opts to be toasty instead. Really leaves the mouth feel very oakified. The vanilla is subtle and more of the cherry aspect of the oak seems to pop out. Long long long dry finish. I really hope some of this beer makes it down to Indiana! Thanks yjb! As it warms, more caramel comes out of the nose, and the sourness seems to smooth out and disappear. Odd, but lovely.

Pours a deep orange color with a minimal white head. Aroma of wood, fruit, wild yeast and spices. Flavor is roast, wood, spices, yeast, cherry and some chocolate. Somewhat long sour finish.

UPDATED: DEC 6, 2007 Pours dark reddish brown with a mostly receding light tan head. Aroma of cherry, sour, toffee, and herbs. Tastes of light caramel, wood, smoke, vinous malts, and cherry. Mouthfeel is medium bodied with lush carbonation. Pretty nice, but this seems more like a Flemish sour than a Saison to me.

Deep brown coloured ale with ruby hints and a medium-sized beige head. Unclean yeasty nose with unripe fruit esters. Earthy, woodsy.. this is an hesitating ale where the acidity does not seem to work in favour of the sweetness Ė it never gets anything close to vinous. It tries to keep the same soft lactic qualities than Bam Biere, but its roastiness of powdery cocoa and general uncleanliness bordering kinda clash into it. Iím still impressed at something so tasty at 4.3%, but Iím afraid Iíd prefer a bit less of the roastiness contribution.

Deep garnet. Healthy off-white head quickly recedes but retains a broken layer of creaminess. Rusty lactobacillus aromas prevail over unripe plums, plastic, burnt malt hulls, stale cacao and a whisper of straw and green banana. Natural carbonation tickles the palate with gentle pinpricks. Tight and well-conditioned. Overaggressive lactobacillus immediately generates a tangy iron characteristic which blankets the subtle hints of chewy leather. Husky malts soon taint the body with an extremely dirty coarseness. Oddly devoid of depth at the center, as the husky malts are all that remains. Quite hollow. Cacao compounds the earthiness by providing a dirt/soil effect, but rather than deepening the flavor and texture, it totally disharmonizes with the overt dryness. Sorely lacks residual sweetness, in particular, and the faint green banana yeastiness reemphasizes the lack of ripeness. Notes of straw and some faint bandage phenols do reemerge, but are mostly negated by the rampant lacto. Scratchy notes of iron clash with the stale cacao flavors, and the already sparse sweetness is entirely nonexistent at this point. Crisply-dry finish is accentuated by the grainy malts, iron, and palate-scrubbing phenols. Hint of dry leather lingers alongside stale and chalky cacao. Might be pretty solid with less lacto, more residuals (to aid the frail and overly crackly body), and a cleaner malt profile. Highly disappointing.

Pours a dark red color with a large, white head. Aroma is yeasty, a bit funky. Sharp, tart body with a dry finish. A touch sour. This beer is like an overall muted version of Bam Biere.

12 oz bottle. Pours medium brown with red hues and an off-white head. Nose is spicy and fruity. Sour, funky flavor with that great brett twang. Finish is lingering. Very earthy. I drank this with my Thanksgiving meal and I thought it was a great compliment to the overall meal.

12 oz. bottle. Pours a clear ruby red in color with a small lasting beige head. The aroma is tart fruits, light yeast, brett, and some wood. The flavor is fruity, heavy on the wood, medium sweet, cherries, with an earthiness surrounding everything. Light/medium body. Iím not sure what to make of this one. Itís not something that I think I would do again.

12 oz bottle. Brown/amber pour. Fairly carbonated, with a lactic, sour, medicinal aroma. Flavor is fairly weak, with a spicy, sour, medicinal flavor throughout. I seem to get a lot of these JP beers in trades, and to be honest itís a brewery that just work with me. Just not my thing.
