The aroma is very sweet with strong notes of caramel and alcohol, as well as light spicy notes. The flavor is sweet with hints of acidity from brettanomyces and with notes of fruits - I pick up passion fruit and pineapples, leading to a dry bitter end that also hides notes of wood. Acidic, woody aroma with some "noble rot" - very much like a Flemish Sour. Medium body with extremely dy caramel accents, overripe fruit and flowers. The finish is both acidic and bitter. Very delicate indeed. 290407 yespr (11649), Copenhagen O, Denmark Aug 14, 2009 75 cL bottle. Pours dark brown with a short lasting tan head. Aroma is sour, fruity and slight wooden to sulphorish. That sourness in Jolly Pumpkin beers really remind me about infections rather than complex wild brett fermentation. Fruity, sulphorish and slight wooden flavoured. Vague peppery and yeasty flavoured. Pours hazy light brown with a nice, staying, creamy beige head. Aroma has notes of raspberries, brett, light roasted notes, oak, apples and a slight pepperiness. Highish, prickly carbonation, fine and light mouthfeel. Flavour has brett, oak, super dryness, light apple. Some roasted notes in the background with some milky chocolate and grapes. This is the winter beer, morphing into a spring beer. Nice! Rastacouere (5551), Montréal, Quebec, Canada Jul 28, 2005 Deep rubyish earthy auburn. Mostly lasting off-white head with initial interesting lacing. Extremely fruity nose with a vinous alcohol protuberance. Grapes, wood and berries are obvious, the barrel giving it an edges over your average flemish sour attempt. Not very sour from the nose, but this is worked around in mouth, the woody tartness works well with the fruits and there is indeed an array of undescribable yeasty funky effects, battery acid, branches, wild fruits, though how they work well together I’m not sure, they sure make up more astringency than I wish for. Drying out nicely on the palate though, I suspect this is better from an aged bottle, because for now, it is fairly chaotic. Medium body, astringent, cleaning carbonation.
