Ale brewed with chestnut and spices
To catch a bit of soft radiance in each special bottle, we wait for fall colors to begin their bright and fleeting glow before brewing this wonderful ale under their autumn fire. Gentle amber malts lead smooth caramel notes, gently lapping against a shore of distant forgotten spice. A beer to contemplate and enjoy!

25.4 oz bottle. Started foaming as soon as the cap was cracked. Had to suck suds a while to get it to settle down as it kept bubbling up the bottle neck even after a glass was poured. Foggy pink brown with a rocky tan head that leaves chunky striations. Candied violets, sweet funk, barnyard and some hay. Lightly sour with a dusty peach pit and nectarine skin tartness. Mild bitter nutmeg finish. Soft, puffy carb; reminds me of meringue cookies.

Fairly dry. Lambic like funk, but it is not a very acidic beer. The nuts and spices really come through and it is richly flavored.

Tasting at Backus’ Backyard Bash. Cloudy dark gold pour. Vinegar sour apple aroma. Slightly sour wood, light apple tart, and sweet malt taste. Interesting, but only ok.

Bottle at the mondiale ’07. aroma is very fruity with apples, and slight banana comming through. Flavour is fruity, with some peppery notes like a saison, and some caramel in the finish. Quite a complex beer, lots going on. Very very nice.

Bottle. Aroma of plastic, caramel malt, toasted coconut, standard JP funk. Flavor a mix of caramel malt and that JP funk. A little more body and malt to balance the by now boring funk than in some other JP’s, but still not really getting me going.

Glowing amber. Large, frothy, off white head. Nose of sour, funky yeast, toasted nuts, spices, and bready malt. The brett is really kickin in this one after almost a year. Same flavors as above with the sourness dominating, some earth and oak in there as well. Medium body, well carbonated. Tasty brew.

Bottle at Paul’s place for Kan’s visit. Pours a hazy brown with a thin white head. Nice little funk note, malt, spice, plums. Medium bodied, light funkiness. Finishes with a light bit of spice, and some faint sweetness. Really nice carbonation.

750 ml bottle @ liquid sunshine tasting - big thanks to bvc for this bad boy; light amber with slight head; big, sweet aromas of sour apples and cherries; drinks on the light side with a nice zing; flavors primarily lemons, cherries; raw and grainy; sourness is muted and soft; drinks very smooth; yummy
