Dark roasted malts, sticky toffee, pecan nuts and some forest-y hops. Heading towards imperial stout, but with its present, cheesy Belgian yeast it has a character on its won. Mild wood presence at the start, with more soft sweet malts from the middle onwards. Soft carbonation, bit sticky in the end. Looses a bit of interest after some sips though. Would have liked more hops or spice (although it would agreeably change this beer’s character). An enjoyable quad. Not cheap. (33cl bottle, De Bierwinkel Leiden)

Mooi bier. Ruikt naar de Ongelovige Thomas, maar met een accent van hout erin. Het verzacht en verdiept het bier tegelijkertijd. Caramel, gedroogd fruit, mout, eiken. Mooi bier!

Bottle from Bierboetiek De Zythotheek, Valkenburg, Netherlands consumed at End of the Road Festival, Larmer Tree Gardens, Dorset/Wiltshire border, Friday 2nd September 2016 Huge amount of vanilla in this, also a tad boozy. Crikey not sure that I would describe this as an American Pale Ale. Fruity, oaky, warming, looks brown in colour through my plastic green tinted Festival glass. Ok beer, not as good as expected but fine. Soft carbonation. A6 A4 T7 P4 Ov14 3.5

33cl bottle at home. Dark ruby-brown pour with a thin beige head. Taste notes of caramel, cafe latte, vanilla, milk, light pine resin and bourbon. Medium bodied, low carbonation and a sticky sweet aftertaste.

The aok ageing gives vanilla and, obviously, oak. The burnt malts have lessened as have the hops, giving a more sweet quadrupel. Sweet dried fruits and caramel are more present and there's less coffee and chocolate. The whole is smoothened out which makes it easy to drink. It's more complex then the regular Ongelovige Thomas. Sampled from tap at NHB 2016. Clear, dark reddish brown with a beige head. Sweetish, malty and slightly fruity aroma of caramel, dark fruits and some oak. Sweet, malty and slightly fruity taste of caramel, a bit of chocolate, dark ripe fruits and some oak, followed by a medium long, slightly bitter, a bit yeasty-spicy finish. Medium to full body, creamy mouthfeel, soft carbonation. Very nice, definitely better than the base beer!

Bottle @ 24 uurs van Maastricht. Cloudy chestnut colour, beige foamy head. Quite complex roasted malts, dried fruits, bitter smoke, leather. Good body, medium carbonation.

Bottle (2016) at Broer & Zus, Beverwijk. Pours black with almost no head. Aroma of caramel, vanilla, wood, alcohol, dark fruits. Taste is moderate sweet and bitter, tanines, caramel, wood, vanilla, dark fruits, alcohol after. Still a bit harsh.

Een zeer rijke quadrupel. Hout, karamel, vanille, appelstroop, koffie. Een mooie donkerbruine en wat viskeuze drank, met een weinig schuim.
