COMMERCIAL DESCRIPTION
Inspired by the farmhouse ales of pre-War World II Europe, Heirloom is an old-world Saison. These beers were vinous in character with sour flavors and an aroma marked by Brettanomyces. We created this flavor profile through a primary fermentation with our house Belgian-strain, then through a secondary fermentation with Brettanomyces Claussenii for six months. As a result, this beer finishes extremely dry with subtle tart and fruit flavors. At 4.8% ABV, Heirloom is a classic Saison with a slightly wild finish.

Malt: German Pilsner and wheat
Hops: Styrian Golding and Czech Saaz
Primary Fermentation: House Belgian-strain
Secondary Fermentation: Brettanomyces Claussenii
ABV: 4.8%

Draft at Kane 1st Anniversary party at Barcade Jersey City. Poured a rusty gold body siting underneath nothing, this had no head at all. Aroma was very funked up with notes of brett,cobwebs, old lemons, wet wood, a touch of honey sweetness and some liquid flowers. Medium/full body with soft carbonation and a dry finish. Flavor wasn’t quite as good as the aroma with the hops coming over with that cat piss note, add in old flowers, brett, yeast and horse blanket. Overall a very nice beer.

Échantillonné du Extreme beer fest 2014: Version vieillie en fût de Chardonnay avec le côté beurré du vin et du brett qui reçoit trop bien la panoplie de zest d’agrumes. Buvabilité formidable.

Draft. Pours gold with a thin white head. Fruity apricot and peach, lighter flowery notes, with some herbal and floral notes. Some funky yeasty notes come out as it warms, but just a little. Good stuff.

Draft. Golden hazy pour with white head. Spices, citrus, funk and year aromas. Flavor is nice and funky and tart, spices and light Brett throughout.
