On tap at Hay Merchant. Aroma is toasted malt and smoke. Taste is an excellent balance of sweet, bitter and savory notes -- about my only complaint is could actually be a little smokier!

Got in a trade with icetrauma. 22 ounce bottle into tulip glass; no bottle dating, but likely bottled this year. Pours lightly hazy very dark reddish brown color with a nice 2 finger dense and fluffy tan head with fantastic retention, that reduces to a nice cap that lasts. Dense soapy lacing clings on the glass, with a good amount of streaming carbonation retaining the head. Aromas of big caramel, chocolate, toast, toffee, biscuit, molasses, dark bread, raisin, prune, wood smoke, ham, roast, light nuttiness, and toasted earthiness. Damn nice aromas with good balance and complexity of dark/toasted malt and smoke notes with moderate dark fruits; and good strength. Taste of big caramel, chocolate, toast, toffee, biscuit, molasses, dark bread, wood smoke, roast, light nuttiness, raisin, prune, and toasted earthiness. Lingering notes of caramel, chocolate, toast, toffee, biscuit, molasses, dark bread, wood smoke, roast, nuttiness, raisin, prune, and toasted earthiness on the finish for a good bit. Fantastic balance and complexity of dark/toasted malt flavors with moderate smoke and dark fruits; with big robustness and zero cloying sweetness after the finish. Medium carbonation and medium-full bodied; with a very creamy and slick mouthfeel that is nice. Alcohol is very well hidden with only a slight warming noticed after the finish. Overall this is a highly excellent smoked doppelbock style! Awesome all around complexity and balance of dark/toasted malt flavors with smoke and dark fruit; and very robust and smooth to sip on. A highly enjoyable offering.

5 oz. sampler from the tap of Houston’s Flying Saucer. Deep dark brown with small beige head. Pleasant malty aroma with hints of smoke and wood, burnt sugar and toasted bread. Rich flavors of sweet malt, caramel, some dark fruits and smoked meat, with minimal balancing bitterness. Full bodied and wholesome, long lingering finish and perfectly hiding the high ABV. Well crafted beer, and thats from a non Doppelbock fan. This new brewery has yet to fail me.

UPDATED: FEB 9, 2013 Black, with a moderate sized light brown head and heavy lacing. Aroma of roast, chocolate, and light smoke. Taste is smoky and roasty with chocolate covered cherries; slightly sweet and slightly bitter. Medium-full bodied and really smooth. Another nice addition from karbach.

Dark brown cherry pour. Mild tan head. Aroma was smokey chocolate, caramel, toffee, licorice, sugary. Flavor starts to show the smoke. All the malty characteristics in the aroma show up but with that smokiness. Sweet clean finish. ---Rated via iPhone

Dark ruby brown with a light brow head. Aroma of smoke dark fruit and dark malts. Very smooth smokey dark chocolate w/ cherry and plum taste, with great carbonation. Overall its a very complex beer that was born for cooking and enjoying while cooking or any other time.

Pours a dark reddish-brown color with a huge tan head. The aroma has some smoked notes as well as some darker, roasted malt and some dark fruit. The flavor has a lot more smoke in it. I get a lot of ashy, meaty smoke as well as some roasted malt and chocolate. Medium mouthfeel and medium carbonation. Very good.
