Glasses at Le Tomifobia - Stanstead, Quebec. Solid mineral, chalk, light caramel and clean juice aroma. A nicely honeyed and settled flavor. More mineral sensation, a warming toasted sugar glow, and good balance of acidity and alcohol, with just the right nips of acid and tannin for balance. I think this is pretty nice example.

Beautiful sparkling gold, gives you a shower as you approach to sniff it. Glorious dry apply aroma, a touch of the sour bite in the aroma. Fairly thin palate, crisp carbonation. But easy to glug - I was very thirsty. Taste again dry, apple skins, not so full, compared to the aroma. Finish woody and corky, so so dry. Again, a superbly crafted French cidre.

Clear medium orange yellow colour with a average to large, frothy, good lacing, mostly lasting, white head. Aroma is moderate apple, sweet apples, wood. Flavour is moderate to light light heavy sweet with a long duration. Body is medium, texture is oily, carbonation is soft. [20120218]

Bottle, 5.5%. Good apple aroma. Cloudy golden colour. The flavour is sweet and a little apple corey.

75 cL bottle. Pours hazy yellow with a small white head. Aroma is dry brett and crisp apple fruity. Light chemical and mild phenolic to plastic. Citric and crisp hoppy into the finish.

Bottled. A hazy dark golden beer with a thin lazing beige head. The aroma has notes of apples. The flavor is sweet with notes of apples, straw, and apple core, leading to a dry finish.

Bottle, 75cl corked. A more or less clear one, golden in color and with some white bubbles on top. The aroma has a touch of apple cores and caramel, but mostly sweet apples. The same goes for the flavor, where there’s a touch of bitterness towards the end. Medium body, semi-dry. A quite decent one, but I’d like it drier. 120218
