COMMERCIAL DESCRIPTION
De Kerstpater is diep donkerbruin met een streepje rood en heeft een beige schuim. Zoals bij de bruine Pater Lieven wordt ook hier de geur overheerst door chocolade met panachévulling, maar daar komt nog zoet bij van kandij en karamel en de warmte van alcohol. In de mond overheerst kandijzoet, maar een bitterheid zoals in zwarte chocolade of cacao verhinderen dat het zoet plakkerig wordt. De afdronk is lang, vooral het zoet blijft hangen.

Une bière de Noël qui a vielli plus d’un an en plus que sa date limite (4/11/2012). Une bière de Noël de 9 % abv, preuve d’honnêteté du brasseur envers sa clientèle. Etiquette ogivale au vitrail moderne stylisé, portant l’année 1897, comme date de création de la brasserie. Couleur quasi noire. Clarté nette. Mousse beige qui tombe vite, normal vu la date et le niveau abv, mais nappe en léger voile pendant toute la dégustation. Arômes de vin cuit, Collioure, porto, prune confite, avec une pointe de cerise noire. 1ère bouche soyeuse et très vineuse, avec une pointe d’anis, de cassis et de myrtille. Arrière-bouche fraîche, mais forte et profonde. 2ème sur du fût de vieillissement. Arrière-bouche très clean mais riche. 3ème avec de très jolies saveurs, très fines, d’une grande élégance. Arrière-bouche de Médoc 1er cru classé. La longueur ne s’en laisse pas conter, elle se hisse vers les sommets de l’art brassicole avec tranquillité mais assurance. Sentir ainsi progresser une bière est une chose merveilleuse. La levure est riche, douce, complexe. L’alcool est parfait pour une Christmas, et développe le breuvage au maximum. La finale fait preuve d’une maestria sans faute. On est au top du top … Conclusion : magnifique Christmas, à la longueur progresive, à la finale superbe (mais n’oublions pas l’âge de mon exemplaire … ). Donc une bière à laisser vieillir sans hésitation, même si la capsule commence à rouiller, ce qui était mon cas … N’hésitez pas, et vous aurez alors une potion magique de Noël … Avis aux amateurs. Je l’avais bien pressenti puisque je lui avais fait l’honneur d’un verre trappiste …. Faites-lui cet honneur aussi et elle vous le rendra au centuple.

No date, looks like it was printed on the cage cap and someone rubbed it out, pretty sure at least a couple years old. Hissing, soda like, black pour with an explosive, foamy, tan head that settles to a thin layer. Aroma of slightly sour, musty funk, a touch of vinegared dark fruit, dough, and bittersweet chocolate. Wow. Complex brew. Flavors: sour, musty barn funk, peppery yeast, vinous vinegared dark fruits, bittersweet cocoa all leading to a finish that is dry, doughy, peppery yeast, subtle anise, and roasty malt. Totally unexpected brew. Sour, funky, roasty, winey, yeasty. Palate is full and well carbonated. Not your standard Christmas brew, perhaps that’s the reason for the 3.40 score. Severely underrated in my book. Outstanding brew.

33 cl. bottle @ Le Poechenellekelder –A: dark brown going to black with a tanned head – S: smells very sweet with sweet dark malts, sweet raisins and prunes, sweet spices, touch glühwein spices and booze – T: sweet caramel malts & spices, sweet dark fruits, sweet dark fruits, prunes, raisins and black grapes, brown sugar, hint of sweet chocolate but not milk chocolate, alcohol – B: creamy and malt heavy, caramel and brown sugar sweet – Another beer which I have never seen or heard about but one that kind of embodies to me all that is good about Belgian beers whilst illustrating what is typical about them or rather what should be there, at least that is from my point of view, haven’t tried many Christmas beers before nor have I gotten reallly the obsession with them but his is clearly a push into the right direction or at least more interest on my behalf

75cL bottle. Brown color with medium head. The aroma is sweet, chocolaty, a bit of a burnt character is there, and some coffee is noticeable. The flavor is similar to most imperial porters with some spices added like ginger. It has one of our favorite flavors: soy sauce. Usually that is from oxidation but we are not sure with this one. Great beer! Thanks Humulone Red!!

Draught @ Delirium Café, Brussels. Dark brown to ruby beer. Medium-sized head is really creamy. The aroma is christmasy and spiced-up. It has aniseed, range peel, licorice, something floral and mellow matliness. Some raisins in the finish. The flavor is slightly syrupy, quite malty, spiced and sweet. Alcohol is totally absent. The palate is medium bodied and incredibly soft, velvety and mellow. Very good drinkability.

Black with hints of brown with hints of red in the translucent middle with a persistent, brown head. Aroma is overall sour but chocolate, dark fruit, and cream are all in the background. WOW, this is complex. A little lambic twang mixed with chocolate milk. This is the type of beer I wished I would have shared with a friend so somebody could have enjoyed it too. But what the hell, it is Christmas, we are buried under snow and ice and I have been holding onto this bottle for a couple of years. A perfect residual sweetness and milk chocolate flavor make a perfect contrast to the sourness of this beer.

This beer poured a very dark reddish-brown color with a thick, diminishing head that didn’t leave much lacing. The aroma is way lush! Stone fruits (especially sour cherries), raisins, winter spices, brandy, molasses and cellar/cobwebs. Oh! My tail is already wagging! The palate is also very nice. It’s medium-to-thick with a velvety texture and almost-fizzy carbonation. The complex flavor supports the evidence in the aroma with the sweet-sourness of a good Flemish Sour Ale, and nice, warm balance and a longer-than-average, slightly sweet and lightly spicy finish. Good Stuff!

Vintage 2006. Dark brown with nice thick off white head. Malty aroma, with overripe fruits, chocolate and yeast. Flavor is sweet with dates, prunes and chocolate. A very discrete sourness and great complexity. Good balance and well hidden alcohol. Very good.
