COMMERCIAL DESCRIPTION
This beer arrives annually to Ottawa in mid January and is gone before spring arrives. The style is Cascadian Dark Ale, also known as a Black IPA or an American Black Ale. The pitch black colour introduces you to roasted malt avours, but with a major hop presence you would expect from an IPA. At 6.4% and 76 IBU’s, you can appreciate this beer being described as bitter, strong and black. What the heck is a Wuchak? Wuchak is a term used by First Nations People and over time, wuchak was slowly transformed into the term - woodchuck. When you drive around Ottawa, you will often notice these groundhogs (aka woodchucks) popping up out of their burrows along the Queensway and the Hunt Club parkway.

Tap at Manx. Pours black with frothy head. Nose is roasted. Aromas of espresso burnt toast pine. Nice bitter finish. Body slightly creamy lively carbonation.

On tap @ Hintonburg Public House Ottawa. Pours a deep brown with a small off-white head. Aroma is smoke, and roasted malt. Taste is dry, roasty, with some smoke offset by a fairly assertive hop profile. Mouthfeel is biting with a long astringent finish.

Drank on tap (12 oz) at Black Tomato (Ottawa) on February 26, 2013. Cola color, medium head. Hoppy aroma of chocolate, a little dry barley. Dry green hop flavor, pale malt notes with a hint of cocoa, very good bitterness. Very good IPA, but it is black!

UPDATED: FEB 13, 2013 Pint at the Highlander in Ottawa. Nearly pitch black pour with a dark tan head. Beautiful aroma of citrus hops with some sweetness and light smokey notes. A nice balanced bitterness with deeply roasted malts. Additional notes of dark coffee, cocoa and smoke with deep floral hoppy bitterness at the end. It’s a beautiful thing! Very nice beer!

En fût au Hintonburg Public House. Couleur brune très foncé, mousse beige mince. Arôme de noix rôtis, houblon et grains. En bouche, torréfaction, houbon, belles saveurs, un peu mince mais bonne buvabilité. Excellente avec le burger.

[on tap at Hintonburgh Public House] Quite citrusy aroma of US hops along with some "fresh wort", chocolate, caramel, and diacetyl accents--Ringwoody ester profile. Clear black-red/garnet under a tan, lacy patch. Sweet caramel flavour with diacetyl and a dark chocolate bitterness as well as hops bitterness--grapefruit and pine. Excellent balance. Medium body, medium carbonation, hops burpy finish that’s moderately bitter.

A deep dark brown IPA with a thin mocha creamy lacing head. In aroma, a nice herbaceous and piney hops, with light chocolate, very nice. In mouth, a smooth bitter chocolate with grassy and catty hops, resinous, a bit of astringency, medium bodied. On tap at Arrow and Loon, Feb. 4 2012.

Pours black with a beige thinning top. Aroma is roasted malts and dark chocolate. Taste dry roasted malts that overpower the hop bitterness. The bitterness is there but all hop flavours are overshadowed by the intense roasted malts with a hint of dark chocolate and coffee.

picked up a growler from the brewery. pours a dark brown colour with a healthy tan head on top. Fresh aroma of nutty malts blended with some oranges maybe lemons too. Rich malt flavour with a hefty kick of hops towards the end. Nicely balanced and rich enough in malt flavours to justify the style. Black IPA’s (cascadian or not) seem to be a bit of fashionable trend at the moment, this is a pleasant example and certainly a nice way to get a fresh hop hit at this time of year.

App.: Deep brown-black with a tan head. Aroma: Strong pine, nice coffee with some dark chocolate, resin, a bit floral maybe?, a bit of ashen broth. Palate: Medium body, relaxed carbonation. Flav.: Pine, slight savoury note, nice black coffee, some dark chocolate, resinous, a bit of citrus (C-hops?), hints of “friendlier” malts as it warms; dry with good bitterness and a decent roasted malt and resin/pine/slightly grapefruit hop finish.

Not bad, certainly a bit more aggressive than their other brews.
