Bottle. Copper pour with a nice white head that dissipated quickly. Caramel, wine, oak, red miso. Medium body. A lot of red miso umami and sweetness throughout. Pretty nice

금범고래 브루어리 - 나고야 적된장 라거 6% ABV 무려 ’된장’이 첨가된 맥주. 산초에일과 마찬가지로 들이킨뒤 잠시 기다려야 살며시 된장의 비릿한 감칠맛이 돈다. 라벨에 새우튀김,우동, 그려져있다
정보 없이 마시면 여간해서는 된장의 맛을 알아차리기 힘들다. 오래 볶은 맥아를 사용한 하면 발효 다크라거 계열로,마일드& 커피의 맛과 향이 감도는 스타우트스런 맥주. 역시나 페어링하기 좋은 맥주로 라벨에 그려진 나고야 특산 먹거리들과 곁들이면 좋을지도
지비 특징중 하나기도 하지만 특수 재료가 첨가된 계열의 맥주들은 그 재료를 어떻게든 숨기려고 안간힘 쓰는 경향이 있다. 이런 맥주만 마시다보니 미국에서 마셨던 로그x모리모토 콜라보레이션 소바 에일의 충격이 그리워진다.

Bottle, at Miga in Champain. Hazy reddish amber, beige head. Quite vinous, with Pinot noir character and light malt, slightly musty. Very interesting, nice.

Nosing: sweet caramel malts, a hint of red wine. Visual: pours light cola brown, decent foamy lasting head, good retention, sticky lacing, several active singular streams. Taste: root beer, toffee malts, caramel, barley malt, 6/10-sweetness, red miso depth. Palate: fizzy-crisp, medium bodied, low hopped bitterness, sweet caramel finish. Overall a good sweet dark lager with a mild miso twist; couldnt identify it as miso without knowing. B-.

Taster at the White Horse, Parsons Green, 25th May 2011. Cloudy mid brown appearance. Very soft savory nose - malty with a hint of meat. Interesting flavour - buckwheat, dried beef jerky, woody fig notes (like a Belgian dubbel).

330 ml bottle from Seijo Ishii @ Nagoya station. Red miso lager - I wonder how this miso was used in the brewing process? It definitely pours a bit red, well, more like reddish brown to be exact. Hazy, foam with some brown notes, dissipating fast. Aroma is quite sweet, some alcohol, cookies and peach. When it gets warmer then aroma improves, there is something salty now, also sweet flowers. Taste sensation is strong at first but not so much when I try to elaborate. Fruity, malty - but not too sweet. Can I taste some umami? Somehow it doesn’t feel to be very balanced, a bit rough from the edges. Aftertaste is bitter and quite short. Hoppy and watery. Overall, interesting take and I salute for using local Japanese ingredients to make this beer more interesting. I do like the idea and concept - but I also think that it is possible to improve from here.

Clear red brown beer, aery beige head, bit adhesive. Aroma: caramel, sugary, some dried fruits, toast, bit nutty. MF: ok carbon, medium to light body. Taste: little sugary, bitter touch, some caramel, bit salty, toast, thin. Aftertaste: salty touch, mocha, umami, bit toasted, hint of dried fruits, bitter touch, but overall a watery impression. Too bad, cause the smell was so promising!
