COMMERCIAL DESCRIPTION
Recipe: René. Our first ever mead.
English: Brewed with fresh honey from Vonsild, just south of Kolding. Thyme and juniper berries added to the wort. Aged 4 months on a fresh French Oak Cask with fresh Beech leaves collected from the park (Legeparken) close to the Castle Lake in Kolding.
Yggdrasil is an atypical mead. Low in alcohol and not as sticky sweet as other meads. It more resembles a dessert wine.
There might be a good deal of sediment in your bottle, as the mead is completely unfiltered.

Bottle at RBESG 09 Sheffield. Hazy pale yellow.. Smells of honey, lemon and some juniper. Taste is sweet and sour, alcohol is very well hidden. I never had mead before.I actually liked this.

From the Bottle at RBESG Harlequin, Sheffield 19/07/2009 Big whisky aroma. Golden coloured slightly hazy in appearance and hoppy. Sweet on the palate with a whisky finish.

Clear light yellow color with virtually none head. Aroma is moderate to heavy honey, spicy, thyme, juniper, alcohol. Flavor is moderate to heavy sweet and light bitter with a average to long duration. A bit like gin. Body is medium, texture is oily, carbonation is flat. [20090620]
