La Sout Chocolat noir: bière sèche sur levure, 7% alcool, non-pasteurisée, refermentée en bouteille dont le gout de chocolat est obtenu par le mélange de 5 type de malt de différents torréfaction.

Bière noire surmontée d’une fine mousse beige qui s’estompe rapidement. Arômes de malts torréfiés, de mélasse, de chocolats, de caramel et d’alcool. En bouche, les saveurs sont similaires, mais le chocolat est peu présent pour une stout chocolat et à mon avis, cette bière bénéficierait d’une touche de sucre supplémentaire afin de contrebalancer l’amertume. Corps moyen.

Bottle - 660ml. Pour an opaque black body with low carbonation and a thin beige foamy head. Malty/hoppy aroma with molasses and spicy hints. Taste is misbalanced and slightly dominated by cocoa flavors. Some woody and plummy notes are also noticeable. Ends with a decent, moderately warming, bittersweet finish.

660 ml bottle. Pours an orangeish opaque black with a very short-lasting beige head. Smell is dark chocolate, roasted malt. Taste is dark chocolate, caramel, a touch of brown sugar. Black coffee, roast. Finish is dark chocolate/cocoa. Not very tasty, overall...Light to medium body. Very weak carbonation. Definitely not a great chocolate stout...

Bouteille 660 ml. Servie dans une pinte anglaise. Je faisais le ménage de mon frigo, et je me suis dit qu’il fallait bien boire cette étrange bière (belle bouteille!), malgré son misérable pointage sur Rb. M’attendant au pire, j’ai quand même été surpris par l’arôme, pas si mal, qui dégage des notes de de chocolat et de malt rotis. Le tout est enveloppé d’une étonnante acidité. Ça se gâte au goût cependant. La bière ne goûte presque rien, sinon l’oxydation. Buvable, mais sans plus. Une bière à oublier.

UPDATED: DEC 20, 2012 Bouteille 660 ml. 7%. Couleur noire comme la nuit, mousse beige foncée. Arôme de diachylon, levures...ça sent pas la stout...rien de la stout...on continue malgré ça. En bouche, ça goute le début de contamination, peu de malt, pas de choco, peu de torréfaction...un peu de Brett, genre, et le vieux plaster. Une bouteille du 25 sept 2012 comme les autres...je vais la ré-essayer. Ma quatrième bouteille, les autres étant infectée et la dernière chance. Autre essais, bouteille du 25 sept, arôme de torréfaction, un peu d’acidité au nez et levures sauvage ?. En bouche, malt, torréfaction, acidité, un peu de plaster. La pire stout au chocolat que j’ai bue de ma vie.

Bottle 660ml. [Bottled 25 sept.2012] Pours very dark brown with pretty low beige head. Some lacing. Aroma is of nude alcohol, acidity, malt. A bit weird, brett reminescent (without the funk). Taste is of roasted malt (exposed), including acidity. Bitter, chocolate, yeast (uncommon), someone told me it was belgian yeast. Palate: astringent mouthfeel, dry. Medium-high body. Overall: An uncommon stout. As it has been said, it’s not what you would expect from a chocolate stout. Surprising at first, but not bad. Easily drinkable for a stout. I find that beer better than it appears, but one has to be quite open-minded and, indeed, get an uninfected bottle.

660 ml bottled on 18th of may 2012 from flaveurs d’ici. A: chocolate with slight roastiness. App: pitch black beige head. T/p: Med body with toasty and long finish. Med carbonation. O: OK lack in complexity. This bottle was in shape.

Bouteille de 6600ml. embouteillée le 14 août 2012. Deuxième offrande de cette brasserie. J’ai aimé la première. Bière presque noire avec une mousse brune qui semble durable. Le nez semble à prime abord quelque peu acide (fruits fermentés) ce qui fait peur. Il y a du cacao aussi. La bouche est mince, un peu fruitée, avec des saveurs de grains rôtis et de café. Très ordinaire. 5/10

This is a new small brewery and given that two reviewers have found it tasted terrible and two found no problems, possibly it is having quality control or sterilization issues. I also drank a bottling from Aug. 14 and there was nothing off or contaminated about it but judging from the two terrible reviews maybe some bottles have gone bad. I have mixed feelings about it since being advertised as a dark chocolate stout I was expecting something a lot darker and richer. Instead there is a chocolate flavour but less of a cacao flavour than a sweetness like a candy bar. It is also a bit thin and it seems like the malt could use more roast. On the other hand it is very drinkable and not unpleasant at all, just one expects more taste from a dark chocolate stout. All in all if one overlooks what seem to be quality control issues that some other reviewers had, it is a pretty decent first production for a new brewery. I would expect some improvement on it though as the brewery progresses.
