This is Wildflower Mead, aged in a Bourbon barrel, then it is flavored with bananas, hazelnuts, Maple syrup and spices. Tasty!

Nose of banana (though slightly fake), cinnamon, butter, bourbon, some maple. Huge nose. Light gold. Tastes remarkably like french toast. Very little alcohol warmth. Nice stuff, if a tad cloying.

Bottle shared by Dasillky1, thanks man. Pours a bright yellow color with a thin coating of oily legs. The aroma, well....this is amazing; huge explosive bananas, nutmeg, vanilla, a rich cake. The flavor was very similar; massive bananas, spicy, hot and aggressive, vanilla, rich sweetness, a dessert for sure. Almonds, sugary sweet. One of the best noses ever.

Bottle @ French Oktoberfest Tasting Ulfborg, 2012. Pours clear no color. Banana, bread, cookies, vanilla and butter. Extremely sweet and just as weird. But even more weird it’s enjoyable and quite exciting. A different experience.

Bottle many thanks too ICEatALAMO. Pours a crystal clear pale yellow, with no head. Amazing it smells like french toast and maraschino cherries. Banana, vanilla, cinnamon, super sweet french toast, maple syrup, bourbon, maraschino cherries, and honey. Reminiscent of the cereal French Toast Crunch. Tasty and interesting, very glad to have tried it.

Traded for a bottle with a buddy in Chicago. This is the 2012 bottling poured into a fantome tulip. Pours a dull yellow color with a few bubbles along the edge of the glasses. Nose is heavenly, I can pick out the cinnamon, maple syrup, doughiness of the French toast, and some underlying vanilla bean. It is basically perfect. I get a lot of similar themes that I get in the nose, but a little less pronounced. There is also a little sourness on the front end that I’m not sure I understand. I didn’t taste this when I previously had it, but my palate just may be a little shot. Mouthfeel is lighter and a little syrupy, with no carbonation, and a moderate finish. Very good mead, but I’ve heard from multiple people that this pales in comparison to previous batches.

Nutmeg, bourbon banana, and more bourbon. Flavors if every breakfast spice available. Long legs and huge aromas of banana and vanilla. Amazingly well done.

Nip bottle, courtesy of a friend. Thanks!! Pours a deep, golden color; nice long legs; headless. This is hugely aromatic and generous in the glass: notes of almonds, amaretto, and a light dose of cinnamon; rich nuttiness, vanilla, and tons of oxidative qualities here; I can’t tell whether some of these notes are well-handled oxidation or additions, but they’re hugely developed; part of one of the most unique and engaging aromas I’ve enjoyed in some time; honestly, this mead was worth it just for the aroma (and I’d be damn curious to know how they did this...). Hugely full mouthfeel, coating the palate; still; some warmth coming through, most definitely but nothing abrasive; the bourbon barrel comes through much more strongly in the mouth, paired with a hefty amount of alcohol that’s well-integrated, certainly, but still quite prominent and more than I’d prefer (it distracts a touch from some of the more subtle notes); beyond that, though, the alcohol subsides after the first few sips, and the same almond-y and amaretto-like notes play out beautifully here: lots of vanilla and nuttiness, certainly honey, and a light accompaniment of cinnamon; lightly spicy, hugely generous throughout, and (thankfully and somewhat surprisingly) never burdeningly sweet or cloying. Beautifully done, if just a touch overbearing in the mouth, for me (and I have a feeling that some folks sensitive to oxidation will have some negative reactions here). The finish is reasonably sweet, showing amaretto, almonds, and light spice.

bottle at dld ’12. Pours clear yellow no head nose butterscotch vanilla licorice maple intense nose flavors of vanilla bourbon butterscotch honey, in the end too cloying to be epic.
