Glass @ Donjaga, Shinjuku: Pours a clear color, hard to tell on the legs in these overflow style pours you get all over Japan. The nose is nice and floral with a snappy light koji acidity and a clean rice dusting. The acidity carries over into the flavor with a clean balanced mouthfeel and finish. Not the most elegant sake, but it’s enjoyable enough to sniff and sip.
